Time 2h40m

Number Of Ingredients 10

1 Whole Wheat Pie Crust
2 tablespoons extra virgin olive oil (divided)
1 large sweet potatoes ((or 2 small) about 1 pound)
3/4 teaspoon kosher salt (divided)
1 large yellow onion (thinly sliced)
4 large eggs
2/3 cup milk
1/4 teaspoon ground nutmeg
4 ounces goat cheese (crumbled)
1 tablespoon fresh rosemary (chopped)

Steps:

  • Prepare the pie dough as directed. Fit it into a deep, 9-inch pie dish and refrigerate until ready to bake.
  • Wash and peel the sweet potatoes, then cut them into 1/4-inch cubes. Toss the pieces with 1 1/2 tablespoons olive oil and 1/2 teaspoon kosher salt. Spread on a baking sheet in a single layer, then roast at 400 degrees F until soft, about 20 minutes. Set aside. Reduce oven temperature to 350 degrees.
  • In a large skillet, heat the remaining 1/2 tablespoon olive oil over medium. Add the sliced onions and cook, stirring occasionally, until soft and golden, about 20 minutes. Set aside.
  • Remove the dough from the refrigerator and place it on a well-floured surface. Working from the center, roll the dough into a 12-inch circle, then transfer it to an ungreased 9″ pie dish. With a fork, pierce rows of holes in the bottom and sides of the dough, about 1 inch apart. Place the pan in a 350 degree F oven and bake until the crust is lightly golden, 10 to 15 minutes. If you will be baking the quiche right away, increase the oven temperature to 375 degrees F.
  • Layer the sweet potatoes in the bottom of the par-baked crust, then sprinkle the caramelized onions, goat cheese, and rosemary over the top. (At this point, the crust and toppings may be covered and refrigerated together for up to 24 hours.) When ready to bake, in a large bowl, whisk together the eggs, milk, nutmeg, and remaining 1/4 teaspoon kosher salt. Pour the egg mixture over the quiche, then carefully place the quiche on a large baking sheet.
  • Bake at 375 degrees F for 45 to 55 minutes, until the quiche puffs up and just barely jiggles. Remove from the oven and let sit 10 minutes. Serve warm or at room temperature.

Categories     Dinner

Time 1h10m

Number Of Ingredients 9

2 medium sweet potatoes (500g), peeled and thinly sliced
1 onion, thinly sliced
1 courgette, thinly sliced
2 tbsp olive oil
6 eggs
50g crème fraîche
30g manchego or vegetarian alternative, grated
1 tbsp chopped chives
green salad, to serve

Steps:

  • Heat the oven to 190C/170C fan/gas 5. Tip the sweet potato slices, onion and courgette into a medium non-stick baking dish (ours was 18cm x 30cm x 4cm), drizzle with the olive oil, season and mix everything together. Bake for 30 mins, tossing the veg halfway. The sweet potatoes should be tender, the courgette a little charred and the onion softened.
  • Meanwhile, whisk the eggs and the crème fraîche together along with a pinch of seasoning. Pour the beaten egg mixture over the sweet potato, onion and courgette. Sprinkle over the manchego and put back in the oven for 25-30 mins until the tortilla is just set. Sprinkle over the chives and eat hot or cold with salad.

Tips:

  • Choose the Right Sweet Potatoes: Select firm and blemish-free sweet potatoes with smooth skin. Avoid those with cuts, bruises, or soft spots.
  • Prick the Potatoes: Before baking, prick the sweet potatoes all over with a fork. This allows steam to escape and ensures even cooking.
  • Don't Overcook the Potatoes: Overcooked sweet potatoes can become dry and tough. Bake them just until they are tender when pierced with a fork, about 45 minutes to 1 hour.
  • Let the Potatoes Cool: Allow the baked sweet potatoes to cool slightly before handling them. This makes them easier to peel and slice.
  • Use Fresh Herbs: Fresh herbs like cilantro, parsley, or chives add a burst of flavor to the tortilla filling. If using dried herbs, use half the amount.
  • Don't Overcrowd the Pan: When cooking the tortillas, don't overcrowd the pan. This will prevent them from cooking evenly.
  • Serve Warm: Tortillas are best served warm. You can reheat them in a skillet or oven if they have cooled down.

Conclusion:

The sweet potato and goat cheese tortilla is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. With its combination of sweet, savory, and tangy flavors, this tortilla is sure to please everyone at the table. So next time you're looking for a quick and easy meal, give this recipe a try!
