Tips:

  • Choose the right sweet potatoes: Look for firm and brightly colored sweet potatoes. Avoid any that are bruised or have blemishes.
  • Roasting the sweet potatoes: Roasting the sweet potatoes brings out their natural sweetness and gives them a slightly smoky flavor. To roast the sweet potatoes, simply toss them with a little olive oil and salt, then roast them in a preheated oven at 425 degrees Fahrenheit for about 20 minutes, or until they are tender.
  • Cooking the black beans: If you are using dried black beans, you will need to cook them before using them in the salad. To cook the black beans, simply rinse them and then simmer them in a pot of water for about 1 hour, or until they are tender.
  • Make the dressing ahead of time: The dressing for this salad can be made ahead of time and stored in the refrigerator for up to 3 days. This makes it a great option for a quick and easy weeknight meal.
  • Add your favorite toppings: This salad is a great base for all sorts of different toppings. Some popular options include chopped cilantro, diced avocado, crumbled feta cheese, or toasted pumpkin seeds.
