SWEET PEPPER SLAW

Sweet Pepper Slaw image

A tasty cabbage, onion, and red, yellow and green pepper slaw from a magazine clipping. Make-ahead; cover and refrigerate for up to 24 hours. Keeps well in the refrigerator. Great for picnics and pot lucks. Use a mandolin to thinly slice vegetables or use the fine slice blade of a food processor. I usually add a couple teaspoons of sugar to the dressing mixture but that is just personal preference.

PEPPER CABBAGE AKA AMISH SLAW-ANNETTE'S

Pepper Cabbage aka Amish Slaw-Annette's image

I love sauerkraut cooked in brown sugar. I love it sweet with just a hint of sour. This recipe is the same. Cabbage and peppers with vinegar and sugar give it that sweet and sour flavor. The cabbage gives it a slight crunch though unlike kraut. This is known as 'Amish Slaw or Pickled cabbage' as well. It goes great with anything...

Yield Serves 4

Number Of Ingredients 9

1/2 cup distilled white vinegar
1/2 cup water
1/4 cup sugar
3/4 teaspoon salt
1/2 teaspoon Dijon mustard
3 tablespoons olive oil
1 tablespoon mustard seeds
1/2 head red cabbage, shredded (about 3 cups)
2 red or yellow bell peppers, cut into 1-inch julienne strips

Steps:

  • In a saucepan bring vinegar and water to a boil with sugar, salt, and mustard and simmer, stirring occasionally, 3 minutes.
  • In a large heavy skillet heat oil over moderately high heat until hot but not smoking. Add mustard seeds and sauté until they begin to pop. Stir in cabbage and sauté, stirring, 1 minute. Add vinegar mixture and simmer vegetables 1 minute.
  • Drain vegetables in a large fine sieve set over a saucepan and transfer them to a bowl. Boil liquid over moderately high heat until reduced to about 3 tablespoons and stir into vegetables. Chill slaw, covered, at least 1 hour or overnight.

Tips:

  • Use a sharp knife to thinly slice the cabbage and sweet pepper. This will help the slaw to be more crisp and flavorful.
  • Choose a variety of sweet peppers for added color and flavor. Red, orange, and yellow peppers are all good choices.
  • If you don't have a mandoline, you can use a food processor fitted with the slicing blade to slice the cabbage and sweet pepper. Just be careful not to overprocess the vegetables, or they will become mushy.
  • Be sure to rinse the cabbage and sweet pepper thoroughly before slicing. This will help to remove any dirt or debris.
  • Add the dressing to the slaw just before serving. This will help to prevent the slaw from becoming watery.

Conclusion:

This sweet pepper cabbage slaw is a refreshing and flavorful side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a healthy and delicious side dish, give this sweet pepper cabbage slaw a try.
