SWEET POTATOES GLAZED WITH MOLASSES, PECANS AND BOURBON
Steps:
- Preheat the oven to 375 degrees F.
- Combine the butter, molasses, brown sugar and cayenne in a medium saucepan and cook over medium heat until smooth, about 5 minutes. Increase the heat to high, add the bourbon and cook for 2 minutes to allow alcohol to burn out. Season with salt and pepper.
- Put the potatoes in a large baking dish, pour the molasses mixture over and toss to coat. Roast in the oven, stirring a few times, until the potatoes are cooked through and glazed, about 20 minutes. Remove to a platter and top with the pecans.
- Alternatively, this can be done in a large saute pan: Melt the butter, molasses, brown sugar and cayenne over medium heat. Add the bourbon and let the alcohol cook out. Add the potatoes and cook until glazed over medium-high heat. Transfer to a platter and top with the pecans.
SWEET & SPICY GLAZED PECANS
I love to add these pecans to salads of all kinds. Of course, they are pretty great just as they are! Feel free to adjust the seasoning to suit your individual taste. Also, walnuts and mixed nuts are really good fixed this way.

ORANGE GLAZED SWEET POTATOES WITH PECANS
Here is a great holiday side dish! Of course it can be made and enjoyed any time. My mom makes this. I prefer to mash the potatoes somewhat coursely or lumpy rather than as smoothly as typical mashed potatoes.

Steps:
- Preheat oven to 375. Bake potatoes until very tender -- about 1 hour and 20 minutes. Let cool, and reduce oven heat to 350.
- Scoop potatoes out of peels and mash until desired texture. Stir in remaining ingredients and place in casserole dish (9 X 9).
- Combine topping ingredients and sprinkle over potatoes. Bake until done at 350 -- about 1/2 hours.
- Optional: stud with 9 pecan halves at even intervals before returning to oven, just to make it look pretty.
Tips:
- Use fresh, high-quality pecans. This will ensure that the glazed pecans have the best flavor and texture.
- Toast the pecans before glazing them. This will help to bring out their natural flavor and make them more crunchy.
- Use a variety of spices in the glaze. This will add depth of flavor to the glazed pecans.
- Don't overcook the glaze. The glaze should be thick and syrupy, but it should not be hard or brittle.
- Let the glazed pecans cool completely before storing them. This will help to prevent them from sticking together.
Conclusion:
Sweet glazed pecans are a delicious and versatile snack or topping. They can be enjoyed on their own, added to trail mix or granola, or used to top salads, yogurt, or ice cream. With just a few simple ingredients and a little bit of time, you can easily make your own sweet glazed pecans at home.
