This came from my sister who got it from her sister-in-law at a family reunion. Onions have mild sweet flavor -- not over powering. Makes excellent side dish.

1 cup white rice (cook as directed with 1 tsp. salt)
7 cups vidalia onions, medium diced (Seems like a lot, but it cooks down)
4 tablespoons butter or 4 tablespoons margarine
1 1/2 cups half-and-half or 1 1/2 cups 2% low-fat milk
1 1/2 cups swiss cheese, grated (1/2 pound)

Steps:

  • Sauate onions in butter til soft.
  • Combine ingredients and place in 9 x 13 baking dish.
  • Bake at 350 degrees for 50 minutes.
  • Can be made a day ahead. Tastes even better the next day.
  • Makes great leftovers.

1 cup long-grain rice
1 tablespoon olive oil
¼ cup diced carrot
¼ cup diced celery
¼ cup diced onion
2 cloves garlic, minced
2 cups chicken stock
1 bay leaf
1 pinch ground black pepper, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 2-quart casserole dish with cooking spray.
  • Spread long-grain rice into prepared casserole dish.
  • Heat olive oil in a saucepan over medium heat. Cook and stir carrot, celery, and onion in hot oil until onion is soft and translucent, about 4 minutes. Stir garlic into mixture; cook and stir 1 minute more. Increase heat to high; add chicken stock and bay leaf to the saucepan and bring to a boil. Pour the mixture over the rice in the casserole dish. Cover the dish tightly with aluminum foil.
  • Bake in preheated oven 20 minutes. Remove aluminum foil and continue baking until the rice is tender and has absorbed most of the liquid, about 20 minutes more. Remove and discard bay leaf; season with black pepper. Fluff with a fork to serve.

¾ cup uncooked basmati rice
5 cups water
¼ cup butter
3 pounds sweet onions, coarsely chopped
1 cup half-and-half cream
1 ½ teaspoons salt
2 cups shredded Swiss cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 2-quart baking dish.
  • Bring water to a boil in a large saucepan, and sprinkle in the rice. Stir, reduce heat to low, and simmer the rice until it is half-cooked, about 5 minutes. Drain the rice, and set aside.
  • Melt the butter in a large skillet over medium heat, and cook and stir the onions until translucent but not browned, about 8 minutes. 1/4 cup melted real butter
2/3 cup half-and-half

  • Cook rice in 5 cups boiling water for 5 minutes; drain and set aside.
  • In a large skillet over medium heat, saute the onion in butter until golden.

8 large sweet onions, peeled
1/2 cup butter, melted
1/2 cup Burgundy wine or beef broth
8 teaspoons beef bouillon granules
1 teaspoon dried thyme

1-1/2 cups shredded Swiss cheese

  • Cut each onion into six wedges to within 1/2 in. of the bottom. Place each onion on a piece of heavy-duty foil (about 12 in. square)., In a small bowl, combine the butter, wine, bouillon, thyme and pepper. Spoon over onions; sprinkle with cheese.
