Time 35m

Number Of Ingredients 10

1/4 c unsalted butter
1/2 vidalia onion or other large sweet onion, chopped
4 oz chile pepper - chopped
1 - 8 oz corn bread mix or corn muffin mix
1 c sour cream
1 c cheddar cheese - sharp, grated
1 egg beaten
1/3 c milk
1/4 tsp salt
1/4 tsp dried, dill

Steps:

  • 1. Preheat oven to 400 degrees F.
  • 2. In a medium saucepan, melt butter and sauté the onion until tender but not brown, for approximately 5 minutes.
  • 3. Remove the pan from the heat and add the muffin mix, milk, sour cream, chiles and then the egg. (Do not add the egg first or it will scramble in the hot onion mixture.) Then add half of the cheese, salt and dill.
  • 4. Stir to combine and pour into prepared muffin tins. Sprinkle the remaining cheese on top of each. Bake muffins for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow to cool slightly before removing them from the tins.
  • 5. *Note: These can also be made into a bread when baked in an 8x8 baking pan instead of muffin tins

Tips:

  • Use a variety of onions: Sweet onions are the star of this recipe, but you can also add other types of onions for a more complex flavor. Try using a combination of yellow onions, red onions, and shallots.
  • Don't overcook the onions: Overcooked onions will be mushy and lose their flavor. Cook them just until they are softened and caramelized.
  • Use fresh herbs: Fresh herbs add a burst of flavor to these muffins. If you don't have fresh herbs on hand, you can use dried herbs, but be sure to use half the amount.
  • Don't overmix the batter: Overmixing the batter will make the muffins tough. Stir just until the ingredients are combined.
  • Let the muffins cool completely before frosting them: This will help the frosting to set properly.

Conclusion:

Sweet onion muffins are a delicious and versatile treat that can be enjoyed for breakfast, lunch, or dinner. They are also a great way to use up leftover onions. With their sweet and savory flavor, these muffins are sure to be a hit with everyone who tries them.
