Tips:
- Choose the right onions: Sweet onions, such as Vidalia or Walla Walla, are the best choice for this recipe. They have a mild, sweet flavor that won't overwhelm the other ingredients.
- Don't overcook the onions: Cook the onions until they are softened and translucent, but not browned. Overcooked onions will be tough and bitter.
- Use fresh corn: Fresh corn on the cob is the best choice for this recipe. If you don't have fresh corn, you can use frozen or canned corn, but the flavor will be less sweet.
- Add some spice: If you like a little spice, add a pinch of cayenne pepper or chili powder to the batter. You can also add some chopped jalapeños or serrano peppers.
- Serve it hot: This dish is best served hot out of the oven. It can be served as a main course or a side dish.
