For the topping:
2/3 cup flour (or sub whole wheat flour, gluten free all purpose flour or gluten free oat flour)
1/3 cup packed brown sugar (or sub coconut sugar)
1/2 cup chopped walnuts (or pecans)
1/3 cup oats (gluten free if desired)
1/4 teaspoon cinnamon
1/4 cup butter, melted (or sub vegan butter or coconut oil)
For the crisp:
6 medium Barlett pears, cut into 1/4th inch slices
1/4 cup pure maple syrup
1 teaspoon cinnamon
1 teaspoon vanilla extract
1/2 tablespoon arrowroot or tapioca starch

Steps:

  • Preheat oven to 350 degrees F. Generously grease an 8x8 baking pan or 9 inch skillet with nonstick cooking spray. Set aside.
  • To make the topping: Combine the flour, oats, brown sugar, cinnamon and walnuts in a large bowl until well-combined. Pour in the melted butter and use your hands to combine until the mixture becomes crumbly and resembles wet sand. You may need to use your hands/fingers to form into nice crumbles. Cover the bowl with plastic wrap and place it in the fridge until ready to use.
  • To make the filling: place pears, maple syrup, cinnamon, vanilla and arrowroot starch in a large bowl and toss to combine. Take 1/3 cup of the topping mixture and toss with the pear mixture. Place the pear mixture in a prepared pan and sprinkle evenly with the remaining topping.
  • Bake the crisp on a baking sheet (just in case the filling bubbles over!) for 45 minutes-1 hour, or until topping is golden brown and filling is bubbling. Remove from the oven and cool for 10 minutes on a wire rack. Serve warm with your favorite vanilla ice cream or yogurt on top. Makes 9 servings.

APPLE CRISP WITH OAT TOPPING

Apple Crisp with Oat Topping image

This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

Provided by Carolyn Beth Weil

Categories     Dairy     Fruit     Dessert     Bake     Vegetarian     High Fiber     Apricot     Walnut     Summer     Bon Appétit     Pescatarian     Peanut Free     Soy Free     Kosher

Yield Makes 6 to 8 servings

Number Of Ingredients 15

Topping
3/4 cup all purpose flour
3/4 cup old-fashioned oats
1/2 cup (packed) golden brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
3/4 cup chopped walnuts (about 3 1/2 ounces)
Filling
3/4 cup sugar
2 tablespoons cornstarch
1/4 teaspoon ground cinnamon
Pinch of fine sea salt
2 1/4 pounds apricots (about 12 large), halved, pitted, cut into 1/2-inch cubes (about 6 cups)
Vanilla ice cream

Steps:

  • For topping:
  • Mix flour, oats, brown sugar, cinnamon, and salt in medium bowl. Add butter and rub in with fingertips until mixture comes together in moist clumps. Stir in walnuts.
  • Do ahead: Can be made 1 day ahead. Cover and chill.
  • For filling:
  • Position rack in center of oven and preheat to 350°F. Mix sugar, cornstarch, cinnamon, and salt in large bowl. Add apricots and toss to coat. Transfer apricot mixture to 11x7x2-inch glass baking dish. Sprinkle topping over.
  • Bake crisp until filling is bubbling around edges and topping is crisp and golden, about 1 hour. Cool at least 20 minutes. Serve warm with ice cream.

Tips:

  • Use old-fashioned oats. Quick-cooking oats will not provide the same texture and flavor as old-fashioned oats.
  • Toast the oats before baking. This will help to bring out their flavor and make them more crispy.
  • Be sure to use a non-stick baking sheet. Otherwise, the crisps may stick and be difficult to remove.
  • Let the crisps cool completely before cutting them. This will help to prevent them from crumbling.
  • Store the crisps in an airtight container at room temperature for up to 3 days.

Conclusion:

Sweet oat walnut crisps are a delicious and easy-to-make snack or breakfast treat. They are perfect for on-the-go or for packing in lunches. With their combination of oats, walnuts, and a sweet glaze, these crisps are sure to be a hit with everyone who tries them.
