A sweet out-of-the-ordinary dressing makes this macaroni salad special. My aunt gave me the recipe and it has become one of my favorites. I occasionally leave out the green pepper if I know that people don't like it, and it still tastes great. -Idalee Scholz, Cocoa Beach, Florida

EASY SWEET AND TANGY MACARONI SALAD

Easy Sweet and Tangy Macaroni Salad image

My family doesn't like macaroni salad with a lot of mayonnaise. I threw together this recipe one day when I couldn't find one I liked online. It was a huge hit with everyone helping themselves to seconds. I think this recipe would also be great with some hard boiled egg added. You could also try different vegetables such as celery or green pepper according to your taste. The result is a sweet and tangy, not overly creamy or mayonnaise tasting macaroni salad. Great with grilled food!

My Mom & Dad are coming for dinner tonight and my Mom wanted me to make some sort of Macaroni salad...she likes a little tartness along with sweet to the dressing...so, I started mixing one up, and I must say it's delicious! DRESSING
1 1/2 c mayonnaise
1 1/2 Tbsp dijon mustard
1/4 c plus 2 tablespoons rice vinegar or could use cider vinegar

paprika for garnish

Steps:

  • 1. Cook pasta in salted water for required time on package directions. Drain and rinse well. Place all salad ingredients in a large serving bow and toss well.

MOM'S BEST MACARONI SALAD

Mom's Best Macaroni Salad image

This is, by far, the best macaroni salad I've ever put into my mouth. It has a perfect blend of sweetness and tartness, and it is so pretty with all of the multi-colored veggies. Be ready for this to disappear before you put it on the table! I have six children, and it is all I can do to keep them from nibbling on it while I'm mixing it up!

Time 30m

Yield 16

Number Of Ingredients 11

16 ounces uncooked elbow macaroni
4 carrots, shredded
1 large red onion, chopped
½ green bell pepper, seeded and chopped
½ red bell pepper, seeded and chopped
1 cup chopped celery
2 cups mayonnaise
1 (14 ounce) can sweetened condensed milk
½ cup white sugar
½ cup white vinegar
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Rinse under cold water, and drain.
  • In a large bowl, stir together the carrots, red onion, green pepper, red pepper and celery. Mix in the mayonnaise, condensed milk, sugar, vinegar, salt and pepper. Add the macaroni, toss gently, cover and refrigerate for at least 8 hours. I usually make this a day ahead of time, and stir it occasionally to blend the flavors. The macaroni will absorb some of the liquid.

Tips:

  • Use high-quality mayonnaise for the best flavor. Look for a brand that is made with real eggs and oil, and avoid mayonnaise that contains fillers or additives.
  • If you don't have celery or onion, you can use other vegetables instead. Try diced carrots, bell peppers, or radishes.
  • For a sweeter salad, add a little bit of sugar or honey to the dressing. You can also use a sweeter variety of mustard, such as honey mustard.
  • If you want a tangier salad, add a little bit of vinegar or lemon juice to the dressing. You can also use a spicy variety of mustard, such as Dijon mustard.
  • Serve the salad immediately after making it, or chill it for at least an hour before serving. This will allow the flavors to meld together.

Conclusion:

Sweet and tangy macaroni salad is a classic summer dish that is perfect for potlucks, picnics, and barbecues. It is a simple and easy-to-make salad that can be customized to your own taste. With a few simple ingredients, you can create a delicious and refreshing salad that will be a hit at your next gathering.
