1 pound ground beef
1/2 pound ground pork
1/2 cup panko breadcrumbs
1 large egg, lightly beaten
3 cloves garlic, minced
1 large yellow onion, finely diced
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
Two 10-ounce jars red pepper jelly or hot pepper jelly
1/2 cup orange juice
2 tablespoons soy sauce

Steps:

  • Preheat the oven to 375 degrees F.
  • Mix the meats, panko, egg, garlic, onion, paprika, salt and pepper in a large bowl with your hands until completely combined. Scoop mixture into heaping tablespoons, then roll into neat balls. Transfer to a 9-by-13-inch baking dish. Bake until cooked through, 25 to 30 minutes.

2 Tbsp worcestershire sauce
2 Tbsp a-1 steak sauce,regular
1 c plus 2 tablespoons, chili sauce, divided
3/4 c soft whole wheat bread crumbs
1/4 c dry oatmeal (quick cooking kind)
2 Tbsp onion, chopped
3/4 tsp garlic powder
1/2 tsp salt
1/2 tsp pepper
1/2 c shredded monterey-jack cheese
1 lb lean ground turkey or beef
1 lb italian turkey sausage links, casings removed (if using the beef above, omit this and add 1 pound of ground beef)
1/2 c reduced-sugar apricot preserves

Steps:

  • 1. In a large bowl, combine the eggs, Worcestershire sauce, A-1 Steak sauce and 2 tablespoons chili sauce.
  • 2. Stir in the bread crumbs, oatmeal, onion, garlic powder, salt and pepper.
  • 3. Add cheese and crumble turkey and sausage (or beef) over mixture and mix well. Shape into 1-in. balls
  • 4. Place on a cookie sheet coated with cooking spray. Bake at 375° for 15-20 minutes or until meat is no longer pink.
  • 5. In a large bowl, combine apricot preserves and the 1 cup of remaining chili sauce. Add meatballs and toss gently.

1 medium sweet potato, peeled and coarsely chopped
3 medium carrots, peeled and cut into thick chunks
2 -3 tablespoons water
2 tablespoons olive oil
1 large egg, beaten
2 -3 garlic cloves, minced
1/2 teaspoon ground ginger
1/2 cup orange puree
2 tablespoons jam, no-sugar (strawberry, grape or seedless raspberry)
2 tablespoons ketchup
1/4 teaspoon salt
3/4 cup wheat germ
1 lb lean ground beef

Steps:

  • Orange Puree: In a medium saucepan over medium-high heat, combine sweet potato and carrots and enough cool water to cover the vegetables. Bring to a boil and cook for about 20 minutes or until the carrots are very tender.
  • Drain vegetables, then transfer them to a food processor. Add 2 tablespoons of the water.
  • Purée on high until very smooth. Stop as needed to scape sides of bowl. If needed, add another tablespoon of water to ensure a smooth consistency.

1 ½ cups bread crumbs

¾ cup milk
