MOM'S SWEET BUTTERMILK CORN BREAD

Mom's Sweet Buttermilk Corn Bread image

This corn bread is a little on the sweet side. It's made with white cornmeal, but yellow works too. I learned to make it from my other mom (MIL). It is baked in a cast-iron skillet. Can be used to make stuffing or put leftovers in a cup with milk and put it in the fridge overnight for a comforting breakfast.

SWEET MILK CORNBREAD

Sweet Milk Cornbread image

I have used this recipe for thirty years. It is from a 1974 cookbook called "Country Cooking". It was one of Southern Living Magazines books. I have been using oil in place of the butter that was called for in the original recipe for years with good results. The secret to this cornbread is a "screamin' hot" iron skillet, greased only on the bottom, and a hot oven. I serve this with chili, vegetable soups, and tex mex.

Steps:

  • Preheat oven to 350º.
  • In a bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  • Add the oil, melted butter, honey, eggs, and milk.
  • Pour into a greased 8-inch square pan.

Tips:

  • Use fresh corn kernels: Fresh corn kernels give the cornbread a sweeter, more flavorful taste. If you don't have fresh corn kernels, you can use frozen or canned corn kernels, but be sure to drain them well before using.
  • Use buttermilk: Buttermilk adds a tangy flavor to the cornbread and helps to make it moist and tender. If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to 1 cup of milk and letting it sit for 5 minutes.
  • Don't overmix the batter: Overmixing the batter will make the cornbread tough. Stir just until the ingredients are combined.
  • Bake the cornbread in a hot oven: A hot oven will help the cornbread to rise and brown properly. Preheat the oven to 400 degrees Fahrenheit before baking the cornbread.
  • Let the cornbread cool before serving: Let the cornbread cool for at least 10 minutes before serving. This will help it to set and make it easier to slice.

Conclusion:

Sweet milk cornbread is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is a great way to use up fresh corn kernels and is a perfect side dish for any meal. With its sweet and savory flavor, cornbread is sure to be a hit with everyone at the table.
