This savory tart definitely impressed me. The puff pastry was so buttery and crispy after baking, which went deliciously well with creamy goat cheese, lemon zest and fresh rosemary leaves. All the flavors were just perfectly balanced, YUM!

all-purpose flour

eggs
goat (chevre) cheese
milk
puff pastry
all-purpose flour
lemon
rosemary leaves
black pepper
eggs

Steps:

  • Position a rack in the center of the oven and preheat to 450°F. Crumble the thinly sliced goat cheese into a small bowl. Add the milk and mash with a fork until well mixed. On a lightly floured surface, roll the puff pastry into a 12x17-inch rectangle. Cut the pastry in half lengthwise with a pizza-cutter and then cut a ¾ inch strip off all 4 edges of each piece of pastry. Transfer the two large pieces of pastry to a 13x18-inch rimmed baking sheet. Brush beaten egg on a ¾ inch border around each large piece of pastry. Stack the trimmed strips of pastry onto the damp dough, creating a border all the way around. Evenly spread the cheese mixture inside the borders of each pastry. Then evenly arrange the zest of the lemon over the cheese. Scatter the rosemary leaves and grind a little pepper evenly over the top. Bake the tarts until puffed and deep golden brown on the top and golden on the bottom, about 16 minutes, rotating the pan half way through baking, watch carefully, do not burn. Let it cool for about 3 minutes on a wire rack and cut into bout 4 pieces. Serve warm.

GOAT CHEESE TART

Categories     appetizer

Time P1DT17h25m

Yield 6 servings

Number Of Ingredients 10

1 1/2 cups all-purpose flour, plus more for dusting the board
Kosher salt
13 tablespoons cold unsalted butter, divided
3 to 4 tablespoons ice water
3/4 cup chopped shallots (3 to 4 shallots)
10 1/2 ounces garlic-and-herb soft goat cheese (recommended: Montrachet}
1 cup heavy cream
3 extra-large eggs
1/4 cup chopped basil leaves
1/8 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • For the crust, put the flour and 1/4 teaspoon salt in the bowl of a food processor fitted with the steel blade. Cut 12 tablespoons (1 1/2 sticks) of the butter into large dice, add to the bowl, and pulse until the butter is the size of peas. With the machine running, add the ice water all at once and process until the dough becomes crumbly. Don't overprocess. Dump the dough out on a floured board, gather it loosely into a ball, cover with plastic wrap, and refrigerate for 30 minutes.
  • Roll the dough on a well-floured board and fit it into a 9-inch tart pan with a removable sides, rolling the pin over the top to cut off the excess dough. Butter 1 side of a square of aluminum foil and fit it, butter side down, into the tart pan. Fill the foil with rice or beans. Bake for 20 minutes. Remove the beans and foil from the tart shell, prick the bottom all over with a fork, and bake for another 10 minutes.
  • Meanwhile, heat the remaining tablespoon of butter in a small pan and saute the shallots over low heat for 5 minutes, or until tender. Place the goat cheese in the bowl of the food processor and process until crumbly. Add the cream, eggs, basil, 1/4 teaspoon salt, and the pepper and process until blended.
  • Scatter the cooked shallots over the bottom of the tart shell. Pour the goat cheese mixture over the shallots to fill the shell (if the shell has shrunk, there may be leftover filling). Bake for 30 to 40 minutes, until the tart is firm when shaken and the top is lightly browned. Allow to cool for 10 minutes and serve hot or at room temperature.

GOAT CHEESE AND CARAMELIZED ONION TARTS

Goat Cheese and Caramelized Onion Tarts image

Absolutely sinful as an appetizer or accompaniment to a salad! The oozing goat cheese, contrasted against the caramelized onions, topped off with some balsamic vinegar...need I say more?

Provided by Jgriffeth

Categories     Appetizers and Snacks     Pastries

Time 1h25m

Yield 6

Number Of Ingredients 7

1 (17.5 ounce) package frozen puff pastry, thawed
1 tablespoon olive oil
1 sweet onion (such as Vidalia®), thinly sliced
⅓ cup balsamic vinegar
2 tablespoons balsamic vinegar
1 tablespoon brown sugar
4 ounces crumbled goat cheese

Steps:

  • Cut thawed puff pastry into six 3- to 4-inch rounds using a cookie cutter. Roll edges of each pastry slightly to form 6 small tarts. Set aside.
  • Heat olive oil in a skillet over medium-high heat; stir in sweet onion. Cook and stir until onion has softened and turned translucent, about 5 minutes. Reduce heat to low and continue cooking and stirring until onion is very tender and dark brown, about 40 minutes more. Remove from heat and set aside.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bring 1/3 cup balsamic vinegar to a boil in a saucepan. Reduce heat and let simmer until thickened, 5 to 10 minutes. Stir in 2 tablespoons balsamic vinegar and brown sugar. Remove from heat and set aside.
  • Divide cooked onions between the 6 tart shells and place on a baking sheet. Sprinkle goat cheese evenly on top of each tart.
  • Bake in the preheated oven for 7 minutes. Remove from the oven and drizzle each with balsamic vinegar reduction.
  • Return tarts to the oven and continue to bake until cheese is bubbly and tarts are golden brown, about 8 minutes more.

Tips:

  • Mise en Place: Before you start baking, make sure you have all of your ingredients and equipment ready to go. This will help you stay organized and avoid any scrambling.
  • Use a tart pan with a removable bottom. This will make it much easier to remove the tart from the pan once it's baked.
  • Don't overmix the batter. Overmixing can result in a tough, dense tart crust. Mix the batter just until the ingredients are combined.
  • Blind-bake the tart crust before filling it. This will help to prevent the crust from becoming soggy.
  • Use good quality goat cheese. The better the goat cheese, the better the tart will be.
  • Don't overcook the tart. The filling should be set, but still slightly wobbly in the center.
  • Let the tart cool completely before serving. This will allow the flavors to develop and the tart to set properly.

Conclusion:

The sweet lemon goats cheese tart is a delicious and refreshing dessert that is perfect for any occasion. It's easy to make and can be enjoyed by people of all ages. With its creamy, tangy filling and sweet, buttery crust, this tart is sure to be a hit. So next time you're looking for a delicious and easy dessert, give this sweet lemon goats cheese tart a try.
