2 teaspoons chili powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon pepper
1/8 teaspoon garlic powder
3-1/2 to 4 pounds pork spareribs
JALAPENO BARBECUE SAUCE:
2 cans (8 ounces each) tomato sauce
2/3 cup packed brown sugar
1/3 cup lemon juice
1/4 cup Worcestershire sauce
1 small onion, finely chopped
2 jalapeno peppers, seeded and finely chopped
2 teaspoons beef bouillon granules

Steps:

  • In a small bowl, combine the first six ingredients; rub onto both sides of ribs. Place ribs, meat side up, on a rack in a foil-lined roasting pan. Bake at 325° for 1-1/2 to 1-3/4 hours or until tender. , Meanwhile, in a large saucepan, combine sauce ingredients; simmer, uncovered, for 30-40 minutes or until thickened. , Grill ribs, uncovered, over medium heat for 10-15 minutes or until browned, basting with sauce and turning several times. 2 (16 ounce) pinto beans, drained
3 lbs country-style pork ribs, trimmed
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 medium onion, chopped
1 (10 1/2 ounce) jar red jalapeno jelly
1 (5 ounce) bottle steak, sauce*
2 jalapeno peppers, seeded and finely chopped (optional)

Steps:

  • Place beans in a 4-quart electric slow cooker. Set aside.
  • Cut ribs apart; sprinkle with garlic powder, salt, and 1/2 teaspoon pepper. Place ribs on a rack in a broiler pan. Broil 5 1/2 inches from heat (with electric over door partially opened) 18-20 minutes or until well browned, turning once. Add ribs to slow cooker, and sprinkle with onion.
  • Combine jelly, steak sauce, and if desired, chopped pepper in a sauce-pan; cook over low heat until jelly melts. Pour over ribs; stir gently.
  • Cover and cook on HIGH 5-6 hours or on LOW 9-10 hours. Remove ribs; skim fat from sauce. Cook sauce with beans, uncovered, on HIGH for 30 minutes or until slightly thickened. Add ribs just before serving to reheat.

2 tablespoons paprika
2 tablespoons kosher salt
2 teaspoons cayenne pepper
2 teaspoons freshly ground black pepper
2 cloves garlic, minced
2 oranges, juiced
2 racks baby back ribs (pork ribs), cut into 2-rib pieces
1 1/2 cups diced fresh pineapple
1/4 cup chopped fresh cilantro
1 tablespoon honey
1/2 teaspoon chili powder
Pinch kosher salt
1 jalapeño, seeded and diced
1 small red onion, diced
1 lime, zested and juiced

Steps:

  • For the ribs: Preheat the oven to 325 degrees F.
  • Mix together the brown sugar, paprika, salt, cayenne, pepper, garlic and orange juice in a large bowl. Add the ribs and toss until coated evenly.
  • Cut an aluminum foil sheet that is 18 inches wide and 24 inches long and place on top of a baking sheet. Tip the ribs mixture onto the foil along with any extra juices from the mixing bowl. Fold the foil ends over the ribs, followed by the sides, and then seal the foil tightly to completely enclose. Bake until very tender, about 2 hours.
  • For the relish: Meanwhile, add the pineapple, cilantro, honey, chili powder, salt, jalapeño, red onion and lime zest and juice to a medium bowl and mix everything together. Set aside.
  • Remove the ribs from the oven and preheat the broiler.
  • Carefully open the foil pack to expose the ribs. Arrange the ribs so that the meaty top sides of the ribs are upright and place them under the broiler to caramelize, about 5 minutes.
  • Transfer the ribs to a platter or board, top with the cold pineapple relish and serve.

1 lemon, juiced
6 cups sugar
6 cups lemon juice (about 30 lemons)

Steps:

  • For the jalapeno-berry syrup: Put the blueberries, raspberries, blackberries, sugar, jalapenos and lemon juice in a saucepan. Bring the mixture to a boil, stirring constantly, and then reduce the heat and simmer until thick, 20 to 25 minutes.
  • Strain the mixture through a fine-mesh strainer and press on the fruit with a wooden spoon to get all of the liquid out. Set the berry syrup aside to cool.

1 cup orange marmalade
1/2 cup chopped white onion
1/4 cup brown sugar, light or dark
1 tablespoon ketchup
1 tablespoon Worcestershire sauce
2 jalapeños, one seeded, both finely chopped
1 clove garlic, grated on a rasp
Zest of 1 orange (if using fresh orange juice)
Kosher salt and freshly ground coarse black pepper
1 cup orange juice (preferably fresh)
3 to 4 pounds baby back pork ribs, sliver skin removed
Kosher salt and freshly cracked black pepper
1 orange, sliced into wedges, for serving

Steps:

  • For the sauce: Add the marmalade, onions, brown sugar, ketchup, Worcestershire sauce, jalapeños, garlic, orange zest, a pinch of salt and plenty of coarse ground black pepper to a medium pot on medium-high. Bring to a simmer and cook until slightly reduced and thickened. Remove from the heat and divide as follows: for the basting liquid, pour 1/4th of the sauce into a medium bowl and whisk in the orange juice. Pour the remaining sauce into a medium bowl to use as the glazing liquid.
  • For the ribs: Preheat the oven to 250 degrees F. Sprinkle the ribs generously on all sides with salt and pepper and place on a rimmed baking sheet, bone-side down. Brush lightly all over with the basting liquid. Pour all the remaining basting liquid into the bottom of the baking sheet and cover tightly with aluminum foil. Cook 3 to 5 hours, basting with the liquid every hour and re-covering tightly each time. After 3 hours, begin checking the ribs for doneness by gently pulling at the middle bone to see if it will release easily from the meat. The ribs are also done with about a 1/2-inch of the bone showing on the ends, or a pull at the middle bone feels like it will release the meat.
  • Once the ribs are cooked remove the aluminum foil and brush the ribs with the reserved sauce. Adjust the rack to the bottom of the oven, turn the broiler on high and cook the ribs until the glaze caramelizes, about 10 minutes.
  • Remove the ribs from the oven onto a cutting board, tent with aluminum foil and let rest for 10 minutes. Cut into 1- or 2-bone slices and serve with orange wedges.

1 1/2 c all purpose flour
2 1/2 tsp baking powder
pinch of salt
1 c sugar
3/4 c milk
1 egg
1/4 tsp vanilla extract
1 c cheese, shredded (i used sharp)

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Grease mini muffin tins. (NOTE: I suggest flouring the tins, if you don't these will stick)
  • 3. Mix all ingredients together and pour into greased mini-muffin tins.

This is a great BBQ recipe or in the oven. Not to time consuming, but a long time to cook. You can tweak this recipe any way you want and I do it a little differently every time.

4 -5 lbs baby back ribs
2 tablespoons kosher salt
1 tablespoon paprika
3/4 teaspoon garlic powder
1 1/2 teaspoons onion powder
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
4 ounces jalapeno jelly
1/2 cup cider vinegar
1/2 cup water
4 ounces tequila
1 cup sugar

Steps:

  • Mix dry rub ingredients and rub onto ribs. Let sit in refrigerator at least 30 minutes to two hours.
  • Wrap ribs in foil and place on grill (or oven) on low heat for 1 1/2 - 2 hours or until very tender.
  • While ribs are cooking mix glaze ingredients and simmer until mixture begins to thicken.
  • When ribs are tender remove from foil and place onto grill (or cooking sheet in oven) and turn heat up to medium brush glaze over ribs.
  • Cook for another 20 minutes.
  • Serve ribs with remaining glaze for dipping.

1. WEAR RUBBER OR PLASTIC GLOVES WHEN WORKING WITH HOT PEPPERS. IF YOU SKIN IS SENSITIVE THESE PEPPERS WILL BURN FOR A LONG TIME AFTER YOU WASH THEM.
2. DON'T BEND OVER THE STEAMING POT WHILE COOKING. THE OILS IN THE PEPPERS FLOAT IN THE AIR AND CAN AGGRAVATE ANY BREATHING PROBLEMS AND ALSO IRRITATE EYES.
3. REMEMBER TO WASH YOUR HANDS VERY WELL WHEN YOU FINISH HANDLING THE PEPPERS. IF YOU HAVE ANY RESIDUE OF THE PEPPER OIL ON YOUR HANDS AND TOUCH YOUR EYE OR AROUND IT, YOU WILL REGRET IT FOR A LONG TIME.
1 c lengthwise strips green bell pepper (about 1 meduim)
1/3 c quartered fresh jalapeno peppers with seed
1 cayenne pepper with seed
1 1/2 c cider vinegar
5 c sugar
1 pouch (3-ounce) liquid pectin
5 drops red food color

Steps:

  • 1. Combine pepper strips, jalapeno peppers, cayenne pepper and vinegar in blender. Process-stop-and-go fashion to desired fineness. NOTE: I processed pretty fine.
  • 2. Combine pepper mixture with sugar in a saucepan; bring to a boil. Boil 2 minutes; remove from heat and skim to remove foam. Cool for 5 minutes and then strain to remove peppers and seed. Add pectin and food color.
  • 3. Pour into sterilized jars and fasten lids. Process in boiling water bath for 15 minutes, if desired, or refrigerate (the original recipe did not call for processing, however, I did process) Cool.
  • 4. NOTE: you can leave peppers in this jelly, but you would need to seed the peppers before processing. I wanted a clear pepper jelly so I strained the peppers and seeds.
