TOMATO AND GARLIC PASTA

Tomato and Garlic Pasta image

There is nothing nicer than the flavor of fresh tomatoes. You can use canned, but the trouble you take to prepare this dish is worth it. You prepare the sauce while the pasta is cooking, no long hours of waiting. Great if you want meatless pasta.

Yield 4

Number Of Ingredients 9

1 (8 ounce) package angel hair pasta
2 pounds tomatoes
4 cloves crushed garlic
1 tablespoon olive oil
1 tablespoon chopped fresh basil
1 tablespoon tomato paste
salt to taste
ground black pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • Place tomatoes in a kettle, and cover with cold water. Bring just to the boil. Pour off water, and cover again with cold water. Peel. Cut into small pieces.
  • Cook the pasta in a large pot of boiling salted water until al dente.
  • In a large skillet or saute pan, saute the garlic in enough olive oil to cover the bottom of the pan. The garlic should just become opaque, not brown. Stir in the tomato paste. Immediately stir in the tomatoes, and salt and pepper. Reduce heat, and simmer until the pasta is ready; add the basil.
  • Drain the pasta, but do not rinse in cold water. Toss with a couple of tablespoons of olive oil, and then mix into the sauce. Reduce the heat as low as possible. Keep warm, uncovered, for about 10 minutes when it is ready to serve. Garnish generously with fresh Parmesan cheese.
  • VARIATIONS: Saute fresh quartered mushrooms with the garlic, or add shoestring zucchini along with the tomato.

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 12

1 lb ground beef
1/2 onion, chopped
12 ounces pasta, any kind (I like Rotini or Bowtie)
1 (14 1/2 ounce) can diced Italian tomatoes (undrained)
1 (15 ounce) can tomato sauce
1 (10 3/4 ounce) can tomato soup
1 teaspoon italian seasoning
1/2 tablespoon dried parsley
1/4 teaspoon pepper
1/8 teaspoon salt (or to taste)
1/2 teaspoon garlic powder (or omit and use 2 Cloves of minced)
1 (8 ounce) package shredded five-cheese Italian cheese blend (or cheese of your choice)

Steps:

  • Preheat oven to 350'.
  • In a medium skillet, add beef and onion and cook until beef is no longer pink and onion is translucent.
  • Drain off fat and set aside.
  • While beef is browning, in a large pot, cook pasta according to package directions. (I usually cook it a minute less than directed because it will cook while in the oven as well).
  • When pasta is cooked drain and add rest of the ingredients to the pot, reserving 1/4 of the shredded cheese (about 1/2 cup) and blend well.
  • Transfer above mixture to a large buttered baking dish and spread evenly.
  • Top with remaining 1/4 of cheese.
  • Cover and bake at 350' for 20-30 minutes. Uncover the last 5-10 minutes and bake until hot and bubbly and cheese on top is melted.

Yield Makes 4 servings

Number Of Ingredients 8

Kosher salt
1/4 cup extra-virgin olive oil
4 garlic cloves, thinly sliced
1 pint Sweet 100 tomatoes or other tiny tomatoes
1/2 bunch of garlic chives, cut into 1-inch lengths
12 fresh lemon basil leaves, finely shredded
Freshly ground black pepper, to taste
1 pound spaghetti

Steps:

  • 1 Bring 6 quarts of water to a boil and add 2 tablespoons of salt.
  • 2 In a 12- to 14-inch sauté pan, heat the olive oil over high heat until almost smoking. Lower the heat to medium-high and add the garlic cloves. Cook for 2 minutes, or until softened and slightly browned. Add the tomatoes, chives, and basil and cook over high heat until the tomatoes are just beginning to burst. Season with salt and pepper.
  • 3 Meanwhile, cook the spaghetti in the boiling water according to package directions until it is tender yet al dente. Drain the pasta and add it to the pan with the tomatoes. Toss over high heat for 1 minute, then divide evenly among four warmed pasta bowls and serve immediately.

Tips:

  • Use ripe tomatoes for the best flavor. This will ensure that your sauce is sweet and flavorful.
  • Don't overcrowd the pan when cooking the beef. This will prevent the meat from cooking evenly.
  • Cook the beef until it is browned on all sides. This will help to develop the flavor of the meat.
  • Use a heavy-bottomed pot for the sauce. This will help to prevent the sauce from burning.
  • Simmer the sauce for at least 30 minutes. This will allow the flavors to meld together.
  • Serve the pasta with a sprinkle of fresh parsley or basil. This will add a touch of freshness to the dish.

Conclusion:

This sweet garlic tomato beef pasta is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of sweet tomatoes, savory beef, and aromatic garlic makes for a flavorful and satisfying dish. Serve it with a side of crusty bread or a green salad for a complete meal.
