Steps:
- Using an electic knife or a serrated knife remove the corn kernels from the cob (I use an electric knife for this, it takes less time).
- Place the corn kernels in a large pot; add in water to cover the corn then add in 1 tablespoon salt (add in more water to cover the kernels if needed).
- Bring to a full boil, the reduce heat and boil ONLY until the kernels turn a darker yellow (about 2 minutes, this will not take long).
- Place in a large strainer and rinse under very cold water or plunge into a bowl of ice water.
- Shaking the strainer strain out as much water as possible.
- Mix in 1/2 cup sugar using a wooden spoon until combined with the niblets (this creates a sugar-pac and helps preserve the corn and keeps the corn crisp while freezing).
- Spread the sugar-coated kernels onto a large 15 x 10-inch baking sheet then freeze until completely frozen.
- Place in freezer bags or vacum pac.

SWEET FREEZER CORN RECIPE - (4.3/5)

Steps:
- Husk and clean corn on the cob. Cut kernels off uncooked cobs. Add raw corn kernels, sugar, salt, butter and water to large kettle. Bring to a gentle boil. Simmer 10 minutes. Ladle into freezer bags. Freeze flat until firm. Thaw before using. Ladle corn and a little juice into freezer bags. Lay bags flat on a baking sheet. Freeze until firm. Store corn bags in a box like you would file papers in a filing cabinet. This saves lots of room in the freezer and keeps the corn all in one place. I love card board boxes, they work perfect for this. Sweet corn from the freezer tastes just like delicious buttered and salted corn right off the cob!
Tips:
- Select the freshest corn: Choose ears with bright green husks and plump kernels. Avoid corn with brown or yellow husks, as this indicates that it is old and may not be as sweet.
- Prepare the corn properly: Remove the husks and silk from the corn. Cut off the ends of the corn kernels, and then use a sharp knife to slice the kernels off the cob.
- Blanch the corn: Blanching the corn helps to preserve its color, flavor, and nutrients. To blanch the corn, bring a large pot of water to a boil. Add the corn kernels to the boiling water and cook for 2-3 minutes, or until the kernels are bright green and tender. Drain the corn kernels and immediately transfer them to a bowl of ice water to stop the cooking process.
- Freeze the corn: Drain the corn kernels from the ice water and pat them dry. Spread the corn kernels in a single layer on a baking sheet and freeze for 1 hour. This will help to prevent the corn kernels from sticking together. Once the corn kernels are frozen, transfer them to a freezer-safe bag or container and store them in the freezer for up to 1 year.
Conclusion:
Freezing corn is a great way to preserve its freshness, flavor, and nutrients. By following these tips, you can easily freeze corn at home and enjoy it all year long. Frozen corn can be used in a variety of dishes, such as soups, stews, casseroles, and salads. It can also be roasted, grilled, or microwaved as a side dish.
