Time 45m

Number Of Ingredients 18

1 3/4 cups sugar
3/4 cups dark cocoa powder
2 cups flour
1 1/2 teaspoon baking soda
2 teaspoons baking powder
1 teaspoon salt
3/4 cup vegetable oil
2 teaspoons vanilla extract
3 large eggs
1 cup buttermilk
1/2 cup strongly brewed coffee
1 3/4 cups salted butter, room temperature
1/2 cup cream cheese, room temperature
1 1/2 cups cocoa powder
5 cups powdered sugar
1/2 cup strongly brewed coffee
1 tablespoon vanilla extract
1/2 teaspoon salt

Steps:

  • Preheat oven to 350°F. Grease and line two 8-inch cake pans with parchment paper.
  • In a large bowl, whisk together sugar, cocoa powder, flour, baking soda, baking powder, and salt. In a separate bowl, whisk oil, vanilla, eggs, and buttermilk.
  • Pour the wet ingredients into the dry, whisking until no lumps remain. Pour in brewed coffee, mixing until just combined.
  • Pour batter into prepared pans and bake for roughly 30 minutes, or until a knife inserted in the center of the cake comes out clean. Cool completely on a wire rack before frosting.
  • To make the frosting, place butter and cream cheese in a standing mixer fitted with a paddle attachment (an electric hand mixer also works). Cream on high speed for 1 minute, then turn speed to low and add in cocoa powder. Mix until combined, then add in powdered sugar, brewed coffee, vanilla extract, and salt. Cream on high speed for 1 minute, until mixture has lightened slightly and is fluffy.
  • Frost cake by placing first cake layer onto a cake stand. Top with a healthy dose of frosting. Spread evenly, then repeat with second layer. Use remaining frosting to frost sides of the cake. Last, use the back of a spoon to create a large swirling pattern all around the cake!

Yield Serves 8 to 10

Number Of Ingredients 16

For cake
3 cups all purpose flour
2 cups sugar
1/2 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 cups cold water
1 cup corn oil
1 tablespoon vanilla extract
1 1/2 cups semisweet chocolate chips
For frosting
1/2 cup plus 2 tablespoons (1 1/4 sticks) unsalted butter, room temperature
5 cups powdered sugar
8 tablespoons (about) whole milk
1 1/4 teaspoons vanilla extract
3/4 cup plus 3 tablespoons unsweetened cocoa powder

Steps:

  • Make cake:
  • Preheat oven to 350°F. Butter and flour three 9-inch-diameter cake pans with 1 1/2-inch-high sides. Sift first 5 ingredients into medium bowl. Mix water, oil and vanilla in large bowl. Whisk in dry ingredients. Divide batter among pans. Sprinkle 1/2 cup chocolate chips over batter in each pan.
  • Bake cakes until tester inserted into center comes out clean, about 25 minutes. Cool cakes in pans on racks 15 minutes. Cut around pan sides to loosen cakes. Turn cakes out; cool completely.
  • Make frosting:
  • Beat butter in large bowl until fluffy. Gradually beat in 3 cups sugar. Beat in 6 tablespoons milk and vanilla. Add cocoa and remaining 2 cups sugar; beat until blended, thinning with more milk if necessary.
  • Place 1 cake layer, chocolate-chips side up, on platter. Spread 2/3 cup frosting over. Top with second cake layer, chocolate-chips side up. Spread 2/3 cup frosting over. Top with remaining cake layer, chocolate-chips side down. Spread frosting over sides and top of cake. (Can be made 1 day ahead. Cover with cake dome; let stand at room temperature.)

Tips:

  • Mise en Place: As with any baking recipe, it's important to have all of your ingredients and tools measured and ready to go before you start baking. This will help you stay organized and ensure that you don't forget anything.
  • Use High-Quality Ingredients: The quality of your ingredients will have a big impact on the final product. Use the best quality cocoa powder, chocolate, and butter that you can find.
  • Don't Overmix the Batter: Overmixing the batter can make the cake tough. Mix just until the ingredients are combined.
  • Bake the Cake Properly: Be sure to preheat your oven to the correct temperature and bake the cake for the amount of time specified in the recipe. An underbaked cake will be dense and gooey, while an overbaked cake will be dry and crumbly.
  • Let the Cake Cool Completely: Before you frost the cake, let it cool completely. This will help the frosting to set properly.
  • Use a Good Quality Frosting: The frosting is what really makes this cake special. Use a high-quality cocoa frosting that is rich and creamy.

Conclusion:

This Sweet Dreams Bakery Chocolate Cake with Cocoa Frosting is the perfect cake for any occasion. It's moist, rich, and chocolatey, with a creamy cocoa frosting that is to die for. Follow these tips to ensure that your cake turns out perfectly. With a little time and effort, you can create a delicious and beautiful cake that will impress your friends and family.
