Categories     Lamb/Sheep

Time 2h22m

Yield 4 serving(s)

Number Of Ingredients 13

6 -8 lamb chops
2 ounces butter
2 onions, peeled & sliced
1/2 cup tomato sauce
2 tablespoons flour
4 teaspoons brown sugar
2 teaspoons curry powder
2 tablespoons fruit chutney
1 teaspoon ground ginger
1 teaspoon dry mustard
4 tablespoons white vinegar
1 1/2 cups water
2 tablespoons chopped parsley

Steps:

  • Melt butter in pan, add chops, brown well on both sides (I always well cook the chops at this stage).
  • Arrange browned/cooked chops in a single layer in an oven-proof dish.
  • Add onions to remaining pan drippings, cook 1-2 minutes, remove from pan, and put on top of chops.
  • Place flour, sugar, curry, mustard and ginger in saucepan, mix well.
  • Add vinegar, blend until smooth.
  • Add water, tomato sauce and chutney, stir constantly over heat until mixture boils and thickens.
  • Pour thickened sauce over the chops and onions, cover.
  • Bake in moderate oven for 1.5-2 hours or until chops are tender.
  • Stir in chopped parsley (To save time you can microwave the whole lot at this stage until the chops are tender, also cooking the chops well at the beginning will also save time).

SPICY STICKY LAMB CHOPS

Spicy Sticky Lamb Chops image

Provided by Aarti Sequeira

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 13

1 1/2 teaspoons coriander seeds
1 1/2 teaspoons fennel seeds
1/4 cup plain yogurt
1/4 cup tomato paste
4 teaspoons finely grated ginger
4 teaspoons minced garlic
1/2 teaspoon hot sauce (or as much hot sauce as you like. I like it mild, so you may want more) (recommended: Sriracha)
2 teaspoons light brown sugar
2 teaspoons kosher salt
Freshly ground black pepper
1 teaspoon apple cider vinegar
4 teaspoons vegetable or canola oil
8 (1 1/4-inch thick) lamb loin chops

Steps:

  • Preheat the oven to 475 degrees F.
  • Toast the coriander and fennel seeds in small pan over a medium flame, shaking every 30 seconds so they don't burn. Once they've given off a lovely aroma and have turned a darker tone, remove from the hot pan and cool completely on a plate. Then throw them into your spice grinder and grind to a fine powder.
  • Mix the spices with the yogurt, tomato paste, ginger, garlic, hot sauce, brown sugar, salt, a healthy few grinds of freshly ground black pepper, apple cider vinegar, and oil. Taste and season according to your palate.
  • Cover each chop with the marinade, rubbing it into the meat and fat. You can marinate overnight, a few hours, or just 30 minutes. I've done all three and it tastes great every way.
  • Bake the chops in a 9- by 13-inch baking dish until the lamb is cooked to medium-rare, or to your liking, 15 to 20 minutes. Remove from the oven and allow to rest, tented with foil, for about 5 minutes before serving.

INDIAN LAMB CHOPS

Indian lamb chops image

Try these crispy Indian lamb chops cooked Amritsari-style on the barbecue. Two marinades means it takes more time to prepare, but you'll achieve more flavour

Provided by Good Food team

Categories     Dinner, Main course

Time 1h

Number Of Ingredients 11

12 best-end lamb chops, flattened to 2cm thick (ask your butcher to do this for you)
green chutney
1 lime, cut into wedges to serve
2 tsp Kashmiri chilli powder
2 tbsp ginger & garlic paste
50ml vegetable oil
2 tsp tomato purée
large pinch of crushed black pepper
2 tsp Kashmiri chilli powder
1 tsp garam masala
1 tsp turmeric

Steps:

  • Put the lamb and all the first marinade ingredients in a bowl and mix well. Chill for at least 2 hrs, and up to 4 hrs.
  • Blend all the second marinade ingredients together. Remove the lamb from the first marinade and put it in a clean bowl. Add the second marinade and rub it into the lamb, then chill for a further 4 hrs, or overnight.
  • Light a barbecue with a lid, then barbecue the chops on a high heat until cooked to medium (around 8 mins), making sure the meat isn't directly on the flame to avoid burning the spices. The key is to keep the lid on so the temperature is consistent. Or cook in the oven on a baking tray for 12 mins, and finish off under the grill for 2 mins to crisp them up. Serve with lime wedges for squeezing over and green chutney on the side (see our recipe).

Yield Makes 2 servings

Number Of Ingredients 9

2 cups small cauliflower florets
2 4-to 5-ounce lamb shoulder blade chops
2 teaspoons curry powder, divided
1 tablespoon vegetable oil
1 teaspoon all purpose flour
1/4 cup low-salt chicken broth
1/4 cup whipping cream
2 tablespoons mango chutney
2 large green onions, chopped, divided

Steps:

  • Steam cauliflower until crisp-tender, about 4 minutes. Transfer to bowl; sprinkle with salt and pepper.
  • Sprinkle lamb with salt, pepper, and 3/4 teaspoon curry powder. Heat oil in medium skillet over medium-high heat. Sauté lamb to desired doneness, 4 to 5 minutes per side for medium-rare. Transfer to plates. Pour off oil from skillet.
  • Add 1 1/4 teaspoons curry powder and flour to skillet; whisk 15 seconds. Add broth, cream, and chutney. Boil until thick, whisking, 2 minutes. Add cauliflower and half of green onions; toss to heat through.
  • Spoon curried cauliflower over lamb. Sprinkle with remaining green onions.

Tips:

  • Choose high-quality lamb chops: Look for chops that are evenly marbled and have a bright red color. Avoid chops that are excessively fatty or have a dull appearance.
  • Trim excess fat: Remove any excess fat from the lamb chops before cooking to prevent them from becoming greasy. You can also score the fat on the chops to help them cook evenly.
  • Use a flavorful marinade: Marinating the lamb chops in a flavorful mixture of spices, herbs, and liquids will help to tenderize the meat and add flavor. You can use a variety of marinades, but some popular options include yogurt-based marinades, olive oil-based marinades, and spice-rub marinades.
  • Cook the lamb chops properly: Lamb chops can be cooked using a variety of methods, including grilling, pan-frying, and roasting. The cooking time will vary depending on the method you choose, but it is important to cook the chops to an internal temperature of 145 degrees Fahrenheit for medium-rare or 160 degrees Fahrenheit for medium.
  • Let the lamb chops rest: Before serving, let the lamb chops rest for a few minutes to allow the juices to redistribute. This will help to ensure that the chops are tender and juicy.

Conclusion:

Sweet curried lamb chops are a delicious and flavorful dish that is perfect for a special occasion. By following these tips, you can create a dish that is sure to impress your guests. Serve the lamb chops with a variety of sides, such as rice, vegetables, or salad, to complete the meal.
