SWEET CORN GUACAMOLE

Cool, chunky avocado meets sweet corn in this simple, sassy guacamole.

Provided by Kare for Kitchen Treaty

Time 10m

Number Of Ingredients 6

2 medium cobs of corn (about 1 cup corn kernels)
2 medium ripe avocados
2 tablespoons lime juice (about 1 or 2 medium limes, depending on juiciness)
1 teaspoon finely minced garlic (about 1 small clove)
Handful fresh cilantro (about 1/2 cup loosely packed leaves, finely chopped)
1/2 teaspoon kosher salt plus more to taste

Steps:

  • Place a large pot of water on the stove over high heat and bring to a boil. Peel the husks off the corn and wash. Add corn and boil for three minutes. Remove from water and cool.
  • With a sharp knife, carefully cut the kernels from the cob.
  • Place corn in a medium bowl and add the rest of the ingredients. Stir with a fork until slightly creamy but pieces of avocado are still in tact.
  • Taste and add additional salt if desired. Serve with chips, fresh veggies, or ridiculously (yet awesomely) spicy vegan chipotle sausage.

Tips:

- Choose ripe and flavorful avocados. Look for avocados that are dark green or black in color, and yield to gentle pressure when squeezed. - Use fresh corn kernels. If you don't have fresh corn kernels, you can use frozen or canned corn, but fresh corn will give your guacamole the best flavor. - Roast the corn kernels before adding them to the guacamole. This will give them a smoky and slightly sweet flavor. - Add some chopped cilantro and red onion to the guacamole for extra flavor and color. - Season the guacamole to taste with salt, pepper, and lime juice. - Serve the guacamole immediately, or store it in the refrigerator for up to 2 days.

Conclusion:

This sweet corn guacamole is a delicious and easy-to-make appetizer or snack. It's perfect for parties or potlucks, and it's also a great way to use up leftover corn. With its creamy texture, smoky flavor, and hints of sweetness, this guacamole is sure to be a hit!
