This Mango Chicken recipe is a delicious baked chicken made with sweet and spicy chunky mango sauce.

2 ripe mangoes
1 medium yellow onion
3 garlic cloves
1/2 cup chicken broth
1 lime - juice and zest
1 tsp grated fresh ginger
2 tbsp cilantro
1 tsp red pepper flakes
salt
2 - 2 1/2 lb whole chicken
salt
fresh cracked black pepper

Steps:

  • Dice one of the mangoes and onion. Peel the other mango and grate the meat on a fine grater.
  • Preheat a medium sauce pot over medium heat and add some oil. Saute onion until softened and add garlic and diced mango.
  • Cook for about a minute and add grated mango puree, chicken broth, lime juice, lime zest, ginger, salt, and red pepper flakes.
  • Cook over for 5-7 minutes over medium heat. Stir in cilantro and take it off the heat.
  • Break down the whole chicken into 10 pieces - 4 quarters of breasts, 2 drums, 2 thighs, and 2 wings. Season each piece with salt and pepper.
  • Preheat the oven to 375°.
  • Preheat a large skillet or an oven-safe cooking pan over medium-high heat and add some oil.
  • Sear chicken for a couple of minutes on both sides, until browned.
  • Spread mango sauce all over the chicken, gently shake the pan to help spread it around, and transfer the pan into the oven.
  • Bake for 40-45 minutes.

1 (425 g) can mangoes (sliced and in their syrup)
1 teaspoon ground nutmeg
3 tablespoons ground cinnamon
2 teaspoons allspice
1/2 cup caster sugar

Steps:

  • Separate mango slices from syrup and do not throw away the syrup.
  • Mash mangoes until chunky.
  • Place mangoes, mango syrup, nutmeg, cinnamon, allspice and caster sugar in mixing bowl.

1 medium red onion, chopped
1 small red pepper, seeded and chopped
2 mangos, peeled and chopped
Salt and freshly ground black pepper
1/4 cup tamari sauce
2 tablespoons Worcestershire sauce
1 (1-inch) piece ginger root, peeled
1 orange, zested and juiced
1 lime, zested and juiced
1/4 cup honey
1 cup chicken stock
Hot sauce, a tablespoon or so
4 pieces boneless skinless chicken breasts or thighs
4 loin lamb chops
1 cup chopped arugula or frisee or mixed baby greens
Handful basil or tarragon leaves, shredded or torn

Steps:

  • Heat 1 tablespoon extra-virgin olive oil in a sauce pot or grill pan over medium-high heat. Add onions, peppers and saute to soften 3 to 4 minutes, then add mango and season with salt and pepper. Stir in soy sauce, Worcestershire, ginger, a little zest of citrus fruits, honey, stock and hot sauce. Cook the sauce for 10 minutes, add the orange and lime juice and cook for 2 minutes more, to thicken. Remove the ginger chunk.
  • Heat a grill pan over medium-high heat. Coat the meats with a drizzle of olive oil and season with salt and pepper. Grill the chicken breasts 12 minutes turning once and the lamb a couple of minutes on each side for pink centers. Plate the meats on a serving platter, top with sauce and garnish with spicy-sweet greens and herbs.

2 tablespoons Ghee, recipe follows
1 medium onion, chopped
1-inch piece fresh ginger, peeled and chopped
2 mangoes, peeled and chopped
1/2 cup golden raisins
1 tablespoon light brown sugar
1 tablespoon tamarind paste or rice wine vinegar
1 teaspoon Curry Powder, recipe follows
Kosher salt and freshly ground black pepper
1 pound unsalted butter
2 tablespoons coriander seeds
1 tablespoon cumin seeds
1 tablespoon cardamom seeds
1 tablespoon whole black peppercorns
1 teaspoon fennel seeds
1 teaspoon mustard seeds
1/2 teaspoon whole cloves
2 dried red chiles, broken in pieces, seeds discarded
2 tablespoons turmeric

Steps:

  • Heat the ghee in a skillet over medium heat. Add the onion and ginger and cook for 1 minute. Add the mango, raisins, sugar, tamarind paste, and curry powder. Season with salt and pepper, reduce the heat to low, and cook until everything is soft and the flavors have blended, about 30 minutes. Put the chutney into a bowl and allow it to cool before serving.
  • Put the butter in a heavy saucepan over medium-low heat. Melt the butter slowly and make sure it does not sizzle or brown. Increase the heat and bring the butter to a boil. In a clean coffee grinder or spice mill, grind the toasted spices together to a fine powder. Add the turmeric and give it another quick buzz to combine. Use the curry powder immediately, or store in a sealed jar for up to 1 month.
