Time 30m

Number Of Ingredients 11

1 cup ketchup
½ cup brown sugar
¼ cup apple cider vinegar
1 chipotle pepper in adobo sauce
1 teaspoon adobo sauce
2 Tablespoons honey
1 teaspoon salt
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon black pepper

Steps:

  • Make the sauce. Combine all ingredients for Honey Chipotle BBQ Sauce in a medium saucepan over medium heat. Bring sauce to a boil. Reduce heat to low and simmer for 25 minutes. Want a little more heat? Add a second chipotle pepper to the sauce before simmering.
  • Puree. Remove sauce from heat and allow to cool. Carefully pour sauce into a blender and puree until smooth.
  • Rest, use, and store. Store in an airtight glass container in the refrigerator overnight before using for best results. This rest time allows the flavors to blend together and the acidity of the vinegar to mellow. If you do want to use the sauce immediately, you may want to add an additional teaspoon of honey to balance the vinegar.

1/3 cup packed brown sugar
1/4 cup cider vinegar
1/4 cup freshly squeezed lemon juice
1 1/2 teaspoons Dijon mustard

Bring the stock to a boil over high heat, reduce heat and allow to simmer for about 15 minutes or until the peppers have absorbed some liquid and have become soft. Tips:

  • Prep the Chipotle Peppers: Before starting the sauce, ensure the chipotle peppers are adequately hydrated and pliable. If they're too dry, soak them in hot water for 15-20 minutes to soften.
  • Use Fresh Ingredients: Opt for fresh garlic and ginger for a more intense flavor profile. Mincing them finely ensures they blend well into the sauce.
  • Adjust Sweetness and Heat: Taste the sauce throughout the cooking process. Add more honey or brown sugar for desired sweetness and adjust the chipotle pepper quantity based on your preferred heat level.
  • Simmer for Flavor Development: Allow the sauce to simmer gently for at least 15 minutes. This step helps the flavors meld together and deepen, resulting in a richer sauce.
