Sweet Chilli Prawn/Shrimp and Basil Noodles image

From Australian BH&G Diabetic Living. A very filling healthy meal for 2 people. Fresh packets of stir fry vegetables sell in the supermarkets and green grocers in Australia or just make up your own mix of your favourites.

220 g hokkien noodles
1 tablespoon sweet chili sauce
1 tablespoon lemon juice (freshly squeezed)
1 teaspoon honey
2 teaspoons olive oil
400 g prawns (raw peeled deveined tails intact)
2 garlic cloves (finely chopped)
2 cm ginger (fresh finely grated)
500 g vegetables (pre-cut mixed stir fry, see note in intro)
1 tablespoon water
1 cup basil leaves (small fresh)
2 tablespoons cashews (unsalted roasted roughly chopped)

Steps:

  • Put the noodles in a medium heatproof bowl and pour over enough boiling water to cover and set aside for 2 to 3 minutes to allow the noodles to separate and then drain well.
  • Meanwhile put sweet chilli sauce, lemon juice and honey in a small bowl and stir well to combine and set aside.
  • Heat half of the oil in a large wok on high and add the prawns and stir fry for 1 to 2 minutes or until prawns just change colour and remove fromthe wok and set aside.
  • Heat remaining oil on medium high and add the garlic and ginger and stir fry for 1 minute and then add the vegetables and stir fry for 1 minute and then add the water and cook covered tossing twice for 2 to 3 minutes or until vegetable are just tender.
  • Add the noodles, prawns and sweet chilli sauce mix to the wok and toss for 2 minutes or until well combined and heated through.
  • Remove wok from heat and toss in the basil leaves ande cashews.
  • Divide the noodle mix between shallow bowls and serve straightaway.
  • OPTIONS - for a gluten free and lower salt option replace the prawns with 200 grams diced skinless chicken breast and the noodles with 70 grams (1/3 cup) basmati rice boiled.

3 nests medium egg noodles
½ large cucumber
bunch spring onions , finely sliced
100g cherry tomato , halved
1 green chilli , deseeded, finely chopped
200g cooked king prawns , defrosted if frozen
zest and juice 2 limes
4 tbsp sweet chilli sauce
100g baby spinach leaves
25g roasted cashew

Steps:

  • Boil the noodles for 4 mins, then drain. Cool under running water, then drain again. Put into a large bowl, then using scissors, cut into shorter lengths.
  • Halve cucumber lengthways, then scoop out the seeds. Slice into halfmoons and add to the noodles with the onions, tomatoes, chilli and prawns.
  • Mix the lime zest, juice and chilli sauce to make a dressing and fold through noodles. Put a handful of spinach onto each serving plate, top with the noodles and cashews.

2 tbsp olive oil
1 medium onion , roughly chopped
1 heaped tbsp coriander purée (from a tube)
pinch of crushed dried chillies , to taste
400g can chopped tomatoes with garlic
1 heaped tbsp tomato purée
1 tbsp vegetable bouillon powder
half a pack Chinese egg noodles
400g frozen prawns (large North Atlantic ones are tender and juicy)

Steps:

  • Heat the oil in a wok or deep frying pan. Toss in the onion, squeeze in the coriander purée and sprinkle over the crushed chillies to taste (go easy at this stage). Stir fry for 5 minutes until the onion is softened but not browned.
  • Pour in the tomatoes and 11⁄2 canfuls of hot water, add the tomato purée and sprinkle over the bouillon powder. Season well. Bring to a bubble, stirring, then lower the heat a little and let the sauce simmer for about 15 minutes until slightly reduced but still sloppy. While the sauce is simmering, break the noodles into a bowl and pour in enough boiling water to cover. Stir and set aside.
  • When the sauce is ready, drain the noodles and tip them into the sauce with the frozen prawns. Stir well and heat through for 2 minutes only - just to defrost and heat the prawns. Taste for seasoning and add more chilli flakes and a little sugar if you like. Serve in bowls with spoons and pass round chunky hot bread for scooping up the last of the sauce.
