2 pounds peeled shrimp, cold
4 large cloves garlic, peeled and minced (about 2 tablespoons minced)
1 1/2 teaspoons kosher salt
3 cilantro roots or 3 tablespoons finely-chopped cilantro stems (see note)
1 teaspoon ground white pepper
1 1/2 teaspoons baking powder
Approximately 2 cups of Japanese-style bread crumbs
2 quarts vegetable oil

Steps:

  • Add shrimp garlic, salt, cilantro, white pepper, and baking powder to bowl of food processor. Pulse until smooth paste is formed, scraping down sides of bowl as necessary. Run processor continuously until mixture becomes smooth and sticky, about 15 seconds. Transfer shrimp mixture to a large bowl and refrigerate it for at least 10 minutes.
  • Place bread crumbs in a shallow pie plate. Heat oil in a Dutch oven or wok to 325°F as registered on an instant read or deep-frying thermometer.
  • Roughly divide the shrimp mixture in the bowl into four equal portions. Divide each portion again into four portions to form 16 equal piles.
  • Form each portion of shrimp mixture into a patty about 3 1/2 inches in diameter. Roll each patty in the bread crumbs and gently lower it into the hot oil. The shrimp cakes puff up quite considerably in the oil, so make sure you don't overcrowd your frying vessel.
  • Flip the shrimp cakes over a few times while they're frying. Once they're golden brown, fish them out onto a paper towel-lined plate.

600 g green prawns (raw)
1 egg white
2 fresh lime leaves, shredded
3 tablespoons sweet chili sauce
2 cups fresh corn flakes, crushed finely
3 tablespoons rice flour
oil, for shallow frying
extra sweet chili sauce, to serve

Steps:

  • Place prawn meat, egg white, lime leaves, sweet chili sauce, corn flakes and rice flour in a food processor and process till the mixture is combined, BUT not smooth.
  • With wet hands, shape the mixture into small cakes.
  • Heat enough oil in a frying pan over medium heat to shallow fry.
  • Add prawn cakes a few at a time and cook for 3 minutes on each side, or till golden brown.
  • Place the cooked prawn cakes on kitchen towels to soak up the excess oil.
  • Serve with the extra sweet chili sauce.

400 g green prawns, peeled
2 garlic cloves, diced finely
2 cm ginger, diced finely
1/2 bunch coriander leaves, picked and chopped finely
1 tablespoon lemongrass, finely diced
1/2 teaspoon fish sauce
1 egg
1 tablespoon plain flour
salt and pepper
2 tablespoons sweet chili sauce

Steps:

  • Mince prawns in blender or food processor.
  • Add ginger, garlic, lemon grass, coriander and fish sauce and mix well.
  • Add egg and stir through.
  • Season to taste.
  • Check consistency and add flour as required to stiffen up mixture.
  • Make into small patties using 1 teaspoon of mixture at a time.
  • Refrigerate for 1 hour then pan fry or cook on bbq grill until golden.
  • Add sweet chille sauce and stir gently until sauce caramalises and adheres to patties.
  • Serve while hot.

4 tbsp soft brown sugar
1 tbsp vegetable oil
1 head broccoli , cut into small florets
half a 250g pack baby sweetcorn , halved lengthways
2 tbsp Thai red curry paste (we used Bart's)
1 red pepper , deseeded and sliced
splash Thai fish sauce or low-salt soy sauce
200g cooked fozen prawn , defrosted

Steps:

  • Tip the sugar into a wok, add a splash of water and let it dissolve over a low heat. Once dissolved, turn up the heat until it bubbles, then pour into a heatproof bowl.
  • Heat the oil in the wok, then stir-fry the broccoli and sweetcorn for 3 mins until they start to blister. Stir the curry paste into the caramel, then pour into the wok. Add the pepper and continue to cook for 2 mins. Splash in the fish sauce or soy, add the prawns and fry again to heat through. Serve immediately with rice or noodles.
