2 cups each Rice Chex, Corn Chex and Wheat Chex
2 cups miniature pretzels
2 cups pecan halves
2 cups salted cashews
3/4 cup butter, cubed
3/4 cup packed brown sugar

Steps:

  • In a large bowl, combine the cereal, pretzels and nuts. In a small saucepan, combine butter and brown sugar. Bring to a boil; cook and stir until thickened, about 2 minutes. Pour over cereal mixture; toss to coat. , Spread into 2 greased 15x10x1-in. baking pans. Bake at 350° for 8 minutes. Stir; bake 6 minutes longer. Transfer to waxed paper-lined baking sheets. Cool completely. Store in airtight containers.

I love just about every variety of Chex Mix, but this sweet version is my favorite. The recipe came to me from Ohio, via my sister, Jenny. I made it & took it to school where it was an instant hit. It's still making the rounds. =^..^=

Number Of Ingredients 8

6 c rice chex
6 c thin pretzels
1 c pecan halves, or whatever nut you like
1 c brown sugar, packed
1/4 c light karo syrup
1 stick butter or margarine (1/2 cup)
1 tsp vanilla extract
1/2 tsp baking soda

Steps:

  • 1. Set out two silicone baking sheets (or cover metal cookie sheets with waxed paper).
  • 2. In a large microwave-safe bowl, mix together the Rice Chex, pretzels, and nuts. Set aside.
  • 3. In a smaller microwave-safe bowl (I use my 4 cup glass measuring cup), put in the butter, brown sugar, and corn syrup. Microwave for 1 minute, then quickly stir. Microwave for 2 to 2 1/2 minutes more. Remove from microwave.
  • 4. Stir in vanilla extract and baking soda, mixing well.
  • 5. Pour over the Rice Chex mixture. Toss well & place bowl into the microwave. Cook for 4-5 minutes, stirring twice.
  • 6. Quickly spread on prepared baking sheets & let cool. Break larger pieces. Store in an airtight container.
  • 7. Place chex mix in decorative tins for a quick & delicious holiday gift.
  • 8. NOTE: I've found that the longer microwave times work best for me or the chex mix is sticky. But please experiment with the cooking times since your microwave is different than mine. If the mixture is darkening, take it out. =^..^=

6 c rice chex
6 c thin pretzels
1 c nuts (your choice, but i like pecans)
1 stick (1/2 cup) butter or margarine
1 c brown sugar, packed
1/4 c light karo syrup
1 tsp vanilla extract
1/2 tsp baking soda
YOU ABSOLUTELY NEED WAXED PAPER!

Steps:

  • 1. In a large microwave-safe bowl, mix together the Rice Chex, pretzels, and nuts.
  • 2. In a smaller microwave-safe bowl, put butter, brown sugar, and corn syrup. (I use a 4 cup glass measuring cup.)
  • 3. Microwave the brown sugar mixture for 1 minute, then quickly stir. Microwave for 2 to 2 1/2 minutes more.
  • 4. Stir in vanilla and baking soda & pour over the Rice Chex mixture. Toss well & place large bowl in the microwave, cooking for 4-5 minutes, stirring twice.
  • 5. Quickly spread out on wax paper (or my favorite silicone baking sheets) & let cool. Break larger pieces. Store in an air-tight container.
  • 6. NOTE: With my current microwave, I microwave for 1 minute, then 2 minutes & 15 seconds for Step #3. Then I microwave for 4 minutes & 15 seconds for Step #4. Every microwave is different, so don't be afraid to experiment. You don't want the snack to be sticky.
  • 7. Sweet Chex Crunch makes a great food gift, so line some tins with aluminum foil and share your goodies. =^..^=
