RED WINE REDUCTION DESSERT SAUCE

Red Wine Reduction Dessert Sauce image

I got these recipe ingredients from Chef Bruce at the Red Rooster Cafe in New Braunfels, TX. I serve this sauce with fresh blackberries from my dad's garden. Layer in a wine glass, sweetened whipped cream, berries, sauce, then more whipped cream. Top with a berry and sprinkle with a little powdered sugar. So good! They also use this sauce on their Monte Cristo Sandwich.

Time 20m

Yield 20

Number Of Ingredients 5

16 ounces cherries (frozen or fresh)
1/2 cup granulated sugar
1/2 cup water
1 tablespoon cornstarch
1 tablespoon lemon juice (fresh)

Steps:

  • Gather the ingredients.
  • If working with fresh cherries, wash them thoroughly and carefully remove all the stems and pits.
  • In a medium saucepan, place the cherries (fresh or frozen), sugar, and water. If using frozen cherries, add just half the amount of water to begin with. Bring to a boil over medium-high heat, stirring often.
  • In a small bowl, stir the lemon juice and cornstarch together until smooth.
  • Whisk the cornstarch mixture into the boiling cherry mixture.
  • If working with frozen cherries, check on the texture of the mixture and add one tablespoon of water at a time if too thick.
  • Return the sauce to a boil, stirring constantly. Don't let the sauce scorch on the bottom.
  • Cook until the liquid has properly thickened, about one more minute.
  • Remove the pot from the heat and taste. Add a little extra sugar or lemon juice if needed at this point, depending on your personal preference. Allow the sauce to cool to room temperature before using it.

Tips and Conclusion

Craving a sweet, refreshing treat this summer? Look no further than this delightful sweet cherry ice cream dessert. With its vibrant color, creamy texture, and burst of cherry flavor, this dessert is sure to satisfy your sweet tooth and cool you down on a hot day.

Here are a few tips to ensure your sweet cherry ice cream dessert turns out perfectly:

  • Use fresh, ripe cherries for the best flavor. If fresh cherries are unavailable, frozen cherries can be used instead. Just be sure to thaw them completely before using.
  • Pit the cherries before using. A cherry pitter can make this task quick and easy.
  • For a richer flavor, use a combination of heavy cream and milk in the ice cream base. If you prefer a lighter dessert, you can use all milk.
  • Be sure to chill the ice cream base thoroughly before churning. This will help the ice cream freeze more quickly and smoothly.
  • Churn the ice cream according to the manufacturer's instructions. The churning time will vary depending on the type of ice cream maker you are using.
  • Once the ice cream is churned, transfer it to a freezer-safe container and freeze for at least 4 hours before serving. This will allow the ice cream to firm up and develop its full flavor.
  • Serve the ice cream topped with fresh cherries, whipped cream, or your favorite sundae toppings.

With careful preparation and attention to detail, you'll create a sweet cherry ice cream dessert that will be the star of your next summer gathering. So gather your ingredients, grab your ice cream maker, and get ready to enjoy a taste of pure summer delight.
