Categories     Yeast Breads

Time 2h

Yield 12 serving(s)

Number Of Ingredients 9

1 cup warm water
2 1/2 teaspoons yeast (1 package)
2 cups flour
1 1/4 cups cornmeal
1 cup sweet potato, grated
1/2 teaspoon salt
1/4 teaspoon cayenne (optional)
1/2 teaspoon cinnamon (optional)
1/4 cup vegetable oil

Steps:

  • Sprinkle to yeast over the warm water in a large bowl. Let stand 5-10 minutes, until foamy.
  • Stir in remaining ingredients.
  • Knead 8-10 minutes, until smooth and elastic. (Compared to traditional breadstick dough, this may feel oily, and won't develop such obvious gluten strands.).
  • Cover and let rise about an hour, until doubled in bulk.
  • Preheat over to 350°F.
  • Roll dough into 8-10-inch-long sticks and place on a greased baking sheet. Thinner sticks (pencil-sized) will be crunchier and have more of a caramelized taste. Thicker sticks (finger-sized) will have distinct crust and bread textures.
  • Bake about 10 minutes, until lightly browned.

GRILLED GARLIC BREADSTICKS WITH SWEET AND ZESTY SAUCE

Grilled Garlic Breadsticks With Sweet and Zesty Sauce image

Those garlicky, buttery, crispy, chewy breadsticks you love at the pizza shop are easy to make at home, too. And in the summer, ir's even easier. No need to crank up the oven. Just toss them on them on the grill with whatever else you're cooking. The sesasoning blend in this recipe - kosher salt, garlic powder, black pepper and onion powder - is a pretty traditional take on garlic breadsticks. But it would easy to play with, adding the kick with chili powder or paprika, or even cumin and cinnamon. For a dessert version, make a seasoning mix from 1 Tbsp. cinnamon, 2 Tbsp. sugar, 1/4 tsp. cardamom, and 1/4 tsp. kosher salt. Make an instant dipping sauce by microwaving purchased vanilla frosting.

Tips:

  • To achieve the best results, use fresh ingredients whenever possible.
  • Make sure your yeast is active and fresh. If you're unsure, check the expiration date or test it by mixing it with some warm water and sugar. If it bubbles up after a few minutes, it's good to use.
  • Knead the dough well until it is smooth and elastic. This will help develop the gluten in the flour and give the breadsticks a chewy texture.
  • Let the dough rise in a warm place until it has doubled in size. This will allow the yeast to ferment and produce carbon dioxide, which will create air pockets in the dough and give the breadsticks a light and fluffy texture.
  • Bake the breadsticks in a preheated oven until they are golden brown. This will give them a crispy exterior and a soft and chewy interior.
  • Serve the breadsticks warm with your favorite dipping sauce. Some popular options include marinara sauce, Alfredo sauce, or garlic butter.

Conclusion:

Breadsticks are a versatile and delicious snack or side dish that can be enjoyed by people of all ages. They are easy to make and can be customized to your own taste preferences. With a little practice, you'll be able to make perfect breadsticks every time.
