This recipe was given to me by a neighbor, Pat Dunaway when we lived in Colorado many years ago. Whenever we had a cul-de-sac BBQ, which was several times a year, she didn't dare come without bringing it. It was loved by all. It is very simple to make.

SWEET BAKED CORN PUDDING
As usual, this recipe came my newest "Taste of Home" magazine (Dec/Jan 05). The description read that it's a comforting side dish and spoons up as sweet and creamy as custard. I honestly never, ever thought that this would be something I or my family would like. However, I took one look at the picture that was posted in the magazine of this corn pudding and I was hooked. So, today (Christmas Day!) I made this Sweet Baked corn Pudding, and it was a WINNER! My husband and I just delighted in every bite. However, at first my sons were a little hesitant to try it, because it was something new. I said, "All I ask if that you take one bite, that's it, please!" - 1. Preheat oven to 250 degrees. Coat the bottom and sides of large roasting pan with butter flavored cooking spray. Place popped popcorn and nuts, if using, in roaster.
- 2. In medium heavy pan, slowly melt butter. Add brown sugar, corn syrup and salt. Gently heat to a low boil, stirring constantly. Boil on lowest heat possible without stirring for 5 minutes. Remove from heat.
- 3. Stir in baking soda and vanilla. Gradually, pour over popcorn and nuts, coating evenly. Bake for 1 hour, stirring every 15 minutes. Remove from oven and cool completely on lightly sprayed or non-stick foil. Store tightly in ziplock bags
