Pastry for double-crust pie (9 inches)
3/4 cup sugar
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Dash salt
6 cups thinly sliced peeled tart apples (about 6 medium)
1 cup English toffee bits or almond brickle chips
2 tablespoons butter

Steps:

  • Line a 9-in. pie plate with bottom pastry; trim pastry even with edge of plate. In a large bowl, combine the sugar, flour, cinnamon, nutmeg and salt; add apples and toss to coat. Stir in toffee bits. Pour into crust. Dot with butter., Roll out remaining pastry to fit top of pie; make decorative cutouts in the pastry. Place pastry over filling. Trim, seal and flute edges. Top with cutouts; brush top pastry with cream if desired. Cover edges loosely with foil., Bake at 425° for 30 minutes. 2 tablespoons butter
6 granny smith large apples, peeled, cored and cubed
4 chilies, jalapeno, hatch or 4 poblano chiles, chopped fine
1/2 cup brown sugar
1 teaspoon cinnamon
1 tablespoon cider vinegar
2 tablespoons Grand Marnier or 2 tablespoons cherry juice
1 prepared frozen pie crust
1 cup flour
1/2 cup granulated sugar
1/4 cup brown sugar

1 teaspoon vanilla extract
2 tablespoons water
1 cup packed brown sugar
½ cup sliced almonds
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Peel, core, and thinly slice the apples. Mix the apples with the white sugar, 4 tablespoons cinnamon, and vanilla. Add the water. When the apples are well coated, place in the pie shell.
  • Combine the brown sugar with the almonds and the remaining 4 tablespoons cinnamon. Sprinkle on top of the pie.

1 cup mashed cooked sweet potato
1 egg, lightly beaten
1/4 cup melted butter
2 tablespoons fresh orange juice
1 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 apple, peeled, cored and grated (I use a Granny Smith)
1/2 cup sweet wine (a dessert wine is best)
1 1/2 cups grated cheddar cheese
3 eggs
1 1/2 cups cream
1 pinch nutmeg

  • Crust:.
  • In a bowl combine all ingredients; mix well.
  • Press dough into a large greased pie plate.
  • Filling:.
  • Marinate apple in wine for about 2 hours approx; drain well.
  • Sprinkle apple and cheese over base of pie crust.
  • Beat eggs and cream together; add nutmeg.
  • Pour into pie crust and bake for 180°C (350°F) for 45 minutes in a preheated oven.

1 1/2 pound sweet potatoes (about 2 medium)
1 (9- to 9 1/2-inch) unbaked pie shell
1/4 teaspoon fine sea salt
3/4 cup milk
1/2 teaspoon ground cinnamon
1/2 cup packed dark brown sugar
1/4 teaspoon ground nutmeg
3 eggs, lightly beaten
1 Granny Smith apple, peeled, cored and cut into thin slices

Steps:

  • Preheat the oven to 400°F. Prick sweet potatoes with a fork and place on a rimmed baking sheet lined with parchment paper. Bake about 1 hour or until very tender. Remove from the oven and let cool slightly. Line pie shell with parchment paper or foil and fill with pie weights or dried beans. Bake on the lower rack of the oven about 15 minutes or until just starting to set. Remove the weights and continue to bake 10 to 12 minutes or until lightly golden. Cool on a wire rack 10 minutes. Reduce the oven temperature to 350°F. Meanwhile, peel sweet potatoes and transfer flesh to the bowl of a food processor. Discard skins. Process until potatoes are puréed. Transfer 1 1/2 cups purée to a large bowl (you may have a litte extra). Add milk, sugar, eggs, cinnamon, ginger, nutmeg and salt, and whisk until combined and smooth. Layer apple slices in concentric circles in the bottom of cooled crust. Pour sweet potato filling into crust over apples (you may have extra filling depending on the depth of the crust). Bake about 50 minutes or until just set in center of pie. Let cool to room temperature on a wire rack. Serve or chill in the refrigerator until ready to serve.

I had heard on the Chew someone talking about an apple sweet potato tart. Started me thinking so I tried this from just things I had on hand.

1 pkg pillsbury roll out pie crust
3 medium apples, your pref.
1 large sweet potato
3/4 c brown sugar
1 c sugar
1/2 tsp ground cloves
1/2 tsp apple pie spice
1/2 tsp cinnamon
1/4 tsp nutmeg
1 1/2 stick butter

Steps:

  • 1. Dice apples and potato. Placed one of the pie crusts in deep pie dish. Brushed pie crust with egg white. Fill with diced apples and potato mixed.
  • 2. Mix all dry ingredients. Sprinkle over pie. Cut butter into pieces and place randomly over pie.
  • 3. Place second pie crust on top. I usually brush melted butter over top.. Use fork to poke a few holes in top and place into a 350 degree oven for 45 minutes.

Filling:
•1kg Bramley apples
•150g/ ¾ cup caster sugar
•½ - 1 tsp cinnamon
•2 tbsp flour
Pastry:
•225g butter, cold and cut into cubes
•50g / 1/5 cup golden caster sugar, plus extra
•2 eggs
•350g / 3 cups plain flour

Steps:

  • Start by making the pastry first as it needs to be left to chill. Put the flour and butter into a food processor if you have one and pulse it until it becomes breadcrumbs. If you don't have a processor just use a big bowl and rub the two together until it turns into breadcrumb consistency. Then add the sugar, 1 whole egg and 1 egg yolk. Save the left over egg white for later. Keep pulsing (or mixing) until it forms big lumps then you can mould it into a ball with your hands. Wrap the pastry in cling film and pop in the fridge for 30 - 45 minutes. While it is chilling, you can prepare your apple now. Peel and core them, then chop into small chunks and leave to one side. In a large bowl big enough to fit the apples, mix the sugar, cinnamon and flour together. Chuck the apples into the mixture and give it a good stir around making sure they are all covered. Turn oven on! Gas 5 / 180c Now you can start to roll the pastry out. Lightly flour your work surface and rolling pin. Cut 1/3 of the pastry off and put back in the fridge - that bit is for the top. Roll the remaining pastry out so that it is big enough to make a base for your pie dish. Cut any pastry off that is hanging over the sides, but make sure you leave enough so you can pinch the top and bottom together later. Pour the apples into your pie dish. Next roll out the leftover pastry so that it will fit over the top of the pie. Using the left over egg whites, brush some over the edges of the base. Place your pastry on top and seal together by pinching it with your finger and thumb. Using a sharp knife, make a few slits in the top of the pie, as this will let the steam out when the apples cook. You can also use any leftover pastry and make leaf shapes to decorate the top. Brush the pie all over with egg white and then sprinkle with sugar. Place in the oven for 45 minutes, or until it is golden brown on top.
