Two 10-ounce containers cherry tomatoes
4 cloves garlic, smashed and peeled
2 sprigs fresh basil, torn
1/4 cup olive oil
1/2 teaspoon kosher salt
1/2 cup honey
1 1/2 teaspoons Calabrian chile paste
1/4 teaspoon kosher salt
1 cup ricotta, at room temperature

1/4 cup olive oil
4 to 6 thick slices ciabatta
6 fresh basil leaves, chopped

Steps:

  • For the tomatoes: Preheat the oven to 400 degrees F.

AMAZINGLY SWEET SLOW-ROASTED TOMATOES

Amazingly Sweet Slow-Roasted Tomatoes image

These don't look like they are going to taste as amazing as they do, and I know it might be asking a lot to have the oven on for 2 hours on a hot summer day. But it's on low and the end result will be worth it. Lean over the plate when you bite into the tomatoes, as the juice may squirt. You can eat these as a snack or a side dish, or put them through a food mill for an incredibly sweet sauce.

Provided by Martha Rose Shulman

Time 3h

Yield Serves 4 as a snack, side dish or sauce.

Number Of Ingredients 4

1 pound small plum tomatoes, halved lengthwise
Coarse salt to taste
A tiny amount of sugar
1 tablespoon extra virgin olive oil

Steps:

  • Preheat the oven to 300 degrees. Put the halved tomatoes in a bowl and toss with the olive oil. Oil a rack that will fit on top of a baking sheet. Place foil on the baking sheet and oil the foil, and place the rack on top. Place the tomatoes, cut side up, on the rack. Sprinkle with coarse salt and a tiny amount of sugar. Place in the oven and roast for 2 hours. Remove from the heat and allow to cool for about 30 minutes. The tomatoes will look a little dry on the surfaces and the skin will be tough. But when you bite into the tomatoes you'll experience a rush of incredibly sweet juice and pulp. If you want to use these for a sauce, put through the fine blade of a food mill.

Yield Serves 4

Number Of Ingredients 5

1 pound/500g cherry tomatoes
2 garlic cloves
1 tablespoon clear honey
3 tablespoons olive oil
Flaky sea salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375°F/190°C. Lightly oil a roasting pan. Halve the tomatoes and place them, cut side up, in the dish. They should fit snugly with little or no space between them.
  • Crush the garlic with a pinch of salt, then beat it with the honey, olive oil, and a good grinding of pepper. Spoon this sticky, garlicky mixture over the cherry tomatoes. Roast for about 30 minutes, until golden, juicy, and bubbling.

Tips:

  • Choose ripe, flavorful tomatoes: Look for tomatoes that are deep red and free of blemishes. Avoid tomatoes that are green or have soft spots.
  • Use a variety of tomatoes: Different types of tomatoes will give your dish different flavors. Try using a mix of cherry tomatoes, Roma tomatoes, and heirloom tomatoes.
  • Roast the tomatoes at a high temperature: This will help to caramelize the sugars in the tomatoes and give them a delicious roasted flavor.
  • Season the tomatoes well: Use a variety of herbs and spices to season the tomatoes before roasting. Some good options include basil, oregano, garlic, salt, and pepper.
  • Roast the tomatoes until they are tender: The tomatoes should be roasted until they are soft and slightly charred.
  • Serve the tomatoes immediately: Roasted tomatoes are best served immediately after they are cooked. You can enjoy them on their own, or use them as a topping for pizza, pasta, or salad.

Conclusion:

Sweet and tangy roasted tomatoes are a delicious and versatile dish that can be enjoyed in many different ways. With just a few simple ingredients, you can create a dish that is both flavorful and healthy. So next time you're looking for a quick and easy side dish or appetizer, give roasted tomatoes a try.
