1 medium onion, chopped
2 tablespoons fresh ginger, finely minced
6 jalapeno peppers, finely chopped
1 teaspoon ground cumin
1/2 cup rum
1 fresh pineapple, diced
1/2 cup fresh lime juice
1/2 cup raw sugar (turbinado)
1/4 cup fresh cilantro, chopped
salt & freshly ground black pepper

Steps:

  • In saucepan over medium heat, sauté the onions, ginger, jalapenos, and cumin for 6 minutes.
  • Add the rum and cook until almost all is evaporated.
  • Add the pineapple, lime juice, and sugar, bring to simmer and then remove from heat.
  • Stir in the cilantro, salt and pepper to taste.

1 cup diced sweet onion
1/4 cup diced green pepper
1 (20-ounce) can crushed pineapple
1 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/3 cup cider vinegar
1 teaspoon fresh lime zest
1 tablespoon whole-grain mustard
1 clove garlic, chopped

Steps:

  • In a medium saucepan over medium heat, add the oil onion and green pepper. Saute until the vegetables are soft. Add the pineapple, the salt and the pepper. Cook over medium heat, uncovered, until the liquid reduces, about 30 minutes.

2 small red or orange bell peppers - stemmed, seeded, ribs removed
½ large onion, peeled and quartered
1 ¼ cups white sugar
¾ cup apple cider vinegar
1 ½ teaspoons pickling salt

Steps:

  • Wearing rubber or latex gloves, trim tops off chiles. Working in batches, pulse chiles, bell peppers, and onion in a food processor until chopped into fine bits, about 1 minute per batch. Transfer to a nonreactive 3-quart pot.
