Number Of Ingredients 13

1 tsp toasted sesame oil
2 clove garlic, minced
1 tsp ginger paste, (or fresh grated ginger)
1/4 c creamy peanut butter
2 Tbsp soy sauce
1 Tbsp hoisin sauce
1 Tbsp brown sugar
1 Tbsp rice vinegar
2 tsp sambal oelek (asian chile paste), to taste
1/4 c canned coconut milk (or to desired consistency)
6 oz linguine
1/3 c chopped green onions
1/3 c crushed peanuts

Steps:

  • 1. While linguine is cooking, in a small saucepan over medium heat, add sesame oil, garlic and ginger and cook, stirring, for 1 minute.
  • 2. Add peanut butter, soy sauce, hoisin, brown sugar, vinegar, sambal and coconut milk. Cook and stir until sauce is well combined and thickened, about 4 minutes.
  • 3. Add more coconut milk to make to your desired consistency and adjust seasonings, then add some of the green onions and pasta and toss.
  • 4. Allow to come to room temperature, then sprinkle with remaining green onions and crushed peanuts and serve.

Tips:

  • Use a high-quality peanut butter: The peanut butter is the star of the show in this dish, so it's important to use a good one. Look for a peanut butter that is made with 100% peanuts and has no added sugar or oil.
  • Toast the peanuts: Toasting the peanuts adds a nice nutty flavor and makes them more crunchy. You can toast the peanuts in a dry skillet over medium heat for about 5 minutes, or you can spread them on a baking sheet and toast them in a preheated 350 degree Fahrenheit oven for about 10 minutes.
  • Use fresh vegetables: Fresh vegetables add a nice crunch and flavor to the dish. You can use any vegetables you like, but some good options include carrots, cucumbers, bell peppers, and snow peas.
  • Make the sauce ahead of time: The sauce can be made ahead of time and stored in the refrigerator for up to 3 days. This makes it a great option for a quick and easy weeknight meal.
  • Serve the noodles warm or cold: The noodles can be served warm or cold. If you serve them warm, you can microwave them for about 1 minute or until they are heated through. If you serve them cold, you can chill them in the refrigerator for at least 30 minutes before serving.

Conclusion:

Sweet and spicy peanut noodles are a delicious and easy-to-make dish that is perfect for a quick and easy weeknight meal. The noodles are coated in a creamy and flavorful peanut sauce that is made with peanut butter, soy sauce, rice vinegar, and Sriracha sauce. The noodles are then topped with toasted peanuts, fresh vegetables, and cilantro. This dish is sure to be a hit with your family and friends!
