2 tablespoons olive oil
2 green bell peppers, diced small
2 red bell peppers, diced small
1 large yellow onion, diced small
3/4 cup panko breadcrumbs
1/2 cup whole milk
2 heads garlic, roasted and mashed into a paste

1 cup ketchup
1/4 cup steak sauce
1/4 cup sriracha
1/4 cup maple syrup
1 tablespoon Montreal steak seasoning
2 pounds 80/20 ground beef
1 pound sweet Italian sausage, casings removed
3 eggs, beaten
1 bunch fresh Italian parsley, chopped
Kosher salt and freshly ground black pepper

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Saute the green peppers, red peppers and onions until very soft and browned, 10 to 12 minutes. Transfer to a plate or baking sheet and refrigerate until cold. (This can be done a day ahead.)
  • Preheat the oven to 350 degrees F.
  • Mix the breadcrumbs, milk and roasted garlic in a bowl; it should have an oatmeal-like consistency. Set aside.
  • In another bowl, mix the ketchup, steak sauce, sriracha, maple syrup and steak seasoning. If the sauce is too spicy for you, add a little more ketchup to mellow the heat. Set aside.
  • In a bowl, combine the ground beef, sausage, parsley, eggs, pepper-onion mixture and two-thirds of the meatloaf sauce. Mix well, but don't overwork. Take a small ball of the mixture and make a bite-size patty. Saute the patty in a pan until cooked through, then taste. Add salt and pepper to the meatloaf mix as needed.
  • When you are happy with the flavor, place the meatloaf mixture in a greased loaf pan, or form it into a log and place it on a parchment-lined baking sheet. Bake until the internal temperature reaches 155 degrees F, 1 to 1 1/2 hours. Remove from the oven; adjust the oven to a low broil. Brush the top of the loaf with half of the remaining sauce, then return to the oven to caramelize the sauce, 2 to 3 minutes. Let rest for 20 minutes before slicing. Serve with mashed potatoes and a drizzle of the remaining sauce.

⅔ (18 ounce) bottle barbeque sauce
1 green bell pepper, chopped
1 (10 ounce) can diced tomatoes with green chile peppers
1 cup Salsa Verde flavored tortilla chips, crushed
2 tablespoons Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix ground beef, eggs, onion, barbeque sauce, green bell pepper, diced tomatoes with green chile peppers, Salsa Verde flavored tortilla chips and Worcestershire sauce. Shape into a loaf and place in an 11x7 inch baking pan.

1 lb sage sausage
1 small onion, diced
1 cup celery rib
1 tablespoon garlic
1/4 cup yellow pepper
1/4 cup red pepper
1 tablespoon paprika
1 pinch salt
1 teaspoon pepper
1/4 teaspoon sazon goya
2 tablespoons sofrito sauce
1 egg
1 tablespoon brown sugar
1/4 cup white wine
1 cup breadcrumbs
1 tablespoon basil
1 tablespoon parsley
1/3 cup sweet and spicy barbecue sauce

Steps:

  • Preheat oven to 350 degrees.
  • Take Meatloaf Mix ( Veal, Hamburger, Pork) and Sage Sausage put in bowl pour White wine, Paprika, Salt, Pepper, Sazon, Sofrito, 1 Egg, Bread crumbs, Basil, Parsley, Brown sugar then cut and put Onion, Celery, Garlic, yellow and red Peppers mix together well.
  • Get a larger glass pan put vegetable oil on bottom.
  • Take meat and form it so it fits whole pan then take side of hand and make small indent in the middle of meatloaf making the sides even. Then take BBQ sauce pour on top take spoon and spread it to cover the top of meatloaf and sides.
  • Put in oven and cook for 35 to 40 minutes.

I now make this one and alternate it with my regular one Recipe #102545. The Sweet & Spicy Meatloaf has only a few ingredients and is delicious, and my regular one has more in it, but is delicious too. This has a nice sauce on top. I always thought that if there were more ingredients in a meatloaf, it would taste better, but not necessarily so. This is very,very tasty!

1 cup fresh homemade breadcrumbs
1/2 cup milk
1/4 cup chopped onion
1 teaspoon salt
