2 cans (28 ounces each) baked beans
1 can (20 ounces) unsweetened crushed pineapple, drained
1 cup spicy barbecue sauce
1/2 cup molasses
2 tablespoons prepared mustard
1/2 teaspoon pepper
1/4 teaspoon salt
1 can (6 ounces) french-fried onions, crushed, divided
5 bacon strips, cooked and crumbled, divided

Steps:

  • In a large bowl, combine the first 7 ingredients. Stir in half the onions and bacon. Transfer to a greased 13x9-in. baking dish., Cover and bake at 350° for 45 minutes. Sprinkle with remaining onions and bacon. Bake, uncovered, 5-10 minutes longer or until bubbly.

1 tablespoon butter
2 strips smoked bacon, cut in small dice
1 cup small diced yellow onion
3 tablespoons minced garlic
1 tablespoon minced ginger
1 cup chopped tomato
1 teaspoon ground cumin
1 teaspoon chile powder
1/2 teaspoon cayenne pepper
1/2 cup brown sugar
1/2 cup red wine vinegar
3 tablespoons whole grain mustard
2 cups chicken stock or water
4 cups cooked red beans (you can substitute pinto or black beans)
Salt
Pepper

Steps:

  • Preheat oven to 300 degrees F.
  • In a large, heavy-bottomed, ovenproof pot, on medium heat, cook the onions with the butter and bacon until tender. Turn the heat up to high and add the garlic, ginger, tomato, spices, and sugar. Stir until vegetables start to lightly caramelize. Add the vinegar, mustard and stock. Stir in the beans. Cover and place in the oven for 1 hour. Remove from oven. The beans should have absorbed a lot of the liquid, if the beans are soupy place on top of the stove and cook over medium heat until the desired consistency is reached. Season, to taste, with salt and pepper.

4 slices bacon, cut into 1/2-inch pieces
1 lb dried navy beans, soaked overnight or quick soaked and drained
1 cup diced onion (1 small)
1 tablespoon tomato paste
1/3-2/3 cup molasses
1/4 cup packed dark brown sugar
3 tablespoons minced jalapenos (about 1)
1 teaspoon dry mustard
1/4 teaspoon ground red pepper
5 cups water, divided
1 teaspoon salt, added after cooking

Steps:

  • Preheat oven to 350 degrees.
  • Cook bacon in dutch oven until crisp. Drain all but 1 T. of fat.
  • Add onions and cook until lightly browned.
  • Add tomato paste, cook 2 minutes.
  • Add remaining ingredients, and 4 cups of the water.
  • Bring to a boil, cover and transfer to the oven. Bake for 3 hours.
  • Stir in the remaining 1 C water and bake 1 more hour until tender but not falling apart.
  • Stir in salt.
