Yield 8 servings

Number Of Ingredients 17

8 pounds beef short ribs, cut across the bone
2 garlic cloves
1 bay leaf
1 cup ketchup
1 cup pineapple juice
1/2 cup soy sauce
3 tablespoons honey
2 tablespoons oyster sauce, bottled
1/2 tablespoon chile paste
2 teaspoons granulated garlic
2 slices lemon
2 slices orange
4 scallions, chopped
1 (2-inch) slice fresh ginger
1 red bell pepper, roasted and seeds removed, chopped
2 Camomile tea bags
4 tablespoons sesame seeds

Steps:

  • Fill a large stockpot with water and bring to a boil. Add the ribs, garlic cloves and bay leaf. Parboil the ribs, covered, for 45 minutes to 1 hour, until fork tender. In the meantime, make the sauce.
  • In a medium saucepan, combine all ingredients, except sesame seeds. Cook over medium heat, stirring occasionally, for approximately 15 minutes until the sauce has thickened and is heated through. Place a strainer over a bowl and pour the sauce through it to remove the solids. Add the ribs to the bowl of sauce, turning with tongs to well coat. Arrange the ribs in a single layer on a cookie sheet and pour a ladle full of sauce over the ribs so they are well covered. Sprinkle with sesame seeds. Bake in a preheated 350 degree oven for 20 to 30 minutes. Serve with remaining sauce on the side.

These are so delicious with some hot basmati rice. The sauce is really a quintessential sweet and sour sauce which would be great with meatballs or other meats... Enjoy! (Adapted from a recipe I found on the Fine Cooking website)

Number Of Ingredients 7

1 cup Brown Sugar
2 tablespoons flour
1/2 cup Vinegar - (mom uses white, could use seasoned rice vinegar for gentler taste
1 tablespoon soya sauce
1 tablespoon Worcestershire sauce
1 1/2 cups Boiling water
2 teaspoons Salt

Steps:

  • have the butcher cut the short ribs so that they are about 1 - 2 inches long; then cut the ribsapart from each other.
  • Place in a roaster in the oven at 425, to sear/brown the meat, and turn them - for about an hour. Then turn down to 350 degrees and roast for another hour.
  • If needed, put some water into the roasting pan to keep them from sticking.
  • Once they are fully tender, take out of the oven and drain all the liquid off the meat.
  • Make the sauce, using all the rest of the ingredients. Mix the flour and sugar together before putting into a pan on the stove to make the sauce, - that way it won't lump when you add the water.
  • Cook the sauce till it is thickened, then add to the meat in the roaster.
  • Bake the meat with the sauce, letting it boil up so that the flavour goes through the meat, then turn down the oven to 200 and leave until you are ready to serve.

Tips:

  • Choose the right ribs. Short ribs are the best cut of beef for this recipe. They are flavorful and have a good amount of fat, which helps to keep them moist during cooking.
  • Brown the ribs well. Browning the ribs before braising them helps to develop their flavor and gives them a nice caramelized crust.
  • Use a good quality sweet and sour sauce. The sweet and sour sauce is what really makes this dish special. Be sure to use a sauce that is thick and flavorful.
  • Simmer the ribs until they are fall-off-the-bone tender. This usually takes about 2-3 hours.
  • Serve the ribs over rice or noodles. Rice or noodles are the perfect way to soak up the delicious sweet and sour sauce.

Conclusion:

Sweet and sour short ribs are a delicious and easy-to-make dish that is perfect for any occasion. The ribs are tender and flavorful, and the sweet and sour sauce is the perfect balance of sweet and tangy. This dish is sure to be a hit with your family and friends.
