8 oz cream cheese
1/4 cup sour cream
2 tablespoons honey
1/2 teaspoon minced garlic

Steps:

  • In a food processor combine guava paste and 2 tablespoons of hot water. Blend until smooth. Transfer to a bowl and set aside.
  • Rinse out the food processor. In the food processor combine remaining ingredients and blend until smooth. Season with salt to taste.

1 tablespoon vegetable oil
1 tablespoon peeled and grated fresh ginger
2 cloves garlic, minced
1 cup pineapple or orange juice
2 tablespoons rice vinegar
1 heaping tablespoon brown sugar

1 tablespoon cornstarch blended with 2 tablespoons cold water

  • Heat a wok or saucepan over high heat and add the oil. When the oil is hot, add the ginger and garlic. Stir-fry just until fragrant, and then add the juice, vinegar, brown sugar and soy sauce. 12 jumbo shrimp, peeled, deveined and butterflied
1 cup coconut flakes
1 cup panko breadcrumbs
3 eggs, Beaten
1 cup flour
3 cups frying oil
1 cup guava, concentrate
1/2 cup rice vinegar or 1/2 cup white vinegar
1/2 cup pineapple juice
1/2 cup sugar
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Pre-heat oil to 350 degrees in medium frying pan.
  • In a medium, mixing bowl, combine coconut and panko.
  • Dredge shrimp in flour, then in the egg mixture, then in the panko and coconut mix, pressing down firmly to ensure proper breading.
  • Fry shrimp until golden brown being sure not to burn. (The coconut contains a high sugar content, which may burn quickly.)
  • In a separate saucepan, combine sugar, vinegar, and pineapple juice. Bring to a boil and allow sugar to incorporate into the sauce.
