SWEET AND SOUR SAUCE FOR CHICKEN/PORK/FISH
One of the many things I love to do is to collect local and home-made cookbooks! I found this wonderful recipe in a cookbook I bought from my local thrift store. I sometimes wonder about the journeys these books take. This one traveled all the way from Virginia to Florida! It looks to be older and the pages are brown around the...

- 2. Saute garlic and ginger for approx 3-5 minutes on med-low heat, making sure it does not burn. The smell will be strong :).
- 3. While the garlic and ginger are cooking; In a medium bowl combine the following: Vinegar, Warm Water, Corn Starch, Soy Sauce, Salt, Sugar, Juice AND Zest from 1/2 the Lemon. Whisk together until completely combined. [Zest the whole lemon and set 1/2 of it aside for later]

- 5. Cook at medium heat about 5-10 minutes; stirring every few minutes until it has a glossy like sheen and has a honey like consistency.
- 6. Add 1 tablespoon sesame seeds into the sauce.

Steps:
- Mix the pork with the marinade ingredients and leave to sit for at least 15 mins, or chill for a few hours. In a separate bowl, mix all the coating ingredients. Drain any excess liquid off the pork and toss the pork in the seasoned coating. Can be done 1 hr ahead.
- To make the sauce, heat the oil in a shallow saucepan and gently fry the garlic, ginger and peppers until just starting to soften. Now drop in all the rest of the ingredients except the sesame seeds. Bring everything to the boil and cook for a few mins until thickened, then take off the heat. To make the batter, whisk the flours and baking powder together with 200ml water to a smooth paste.
- Heat the oil in a deep-fat fryer, large saucepan or a wok to 180C or until a drop of batter sizzles and browns in 20 secs. Dip the marinated pork in the batter mix (do it in two or three batches) and let any excess drip off. Fry the pork in batches for about 5-6 mins or until golden. Remove and drain on kitchen paper until all the batches are done. Make sure you bring the oil back to the correct temperature between each batch. Coat the crispy pork in the sauce, then sprinkle over the sesame seeds, coriander and serve with rice or noodles.

Steps:
- Add the oil, sugar, and vinegar to a small saucepan set on 1/4 full heat stirring until sugar dissolves in vinegar, then add the pineapple juice.
- Add the paprika and other spices followed by the ketchup, then the water.
- Turn up the heat a bit and stir frequently almost bringing to a boil for 2-3 minutes.
- Add cornstarch and flour, use a whisk to make sure no clumps form. Toss in the green peppers.
- Keep on low heat stirring occasionally, cook your chicken however you like it, I fry mine. If your sauce starts getting a bit to thick don't worry just add a small amount of water and stir.
- When you're finished cooking your chicken cut it up and toss it in the sauce which should now be almost ready. Cook it in the sauce for 4-7 minutes.
- Remove from heat and enjoy! For best results eat it all the day you make it.

- If you don't have fresh pineapple, you can use canned pineapple chunks or crushed pineapple. Just be sure to drain the pineapple well before using it.
