SWEET-AND-SOUR GREEN BEANS

Yield Makes 10 servings

Number Of Ingredients 5

3 cups red wine vinegar
6 tablespoons sugar
6 tablespoons (3/4 stick) unsalted butter
3 pounds green beans, trimmed
1/3 cup chopped fresh parsley

Steps:

  • Boil red wine vinegar and sugar in heavy medium saucepan over medium-high heat until reduced to 3/4 cup, about 45 minutes. Add butter and whisk until melted. Cool. (Can be prepared 2 days ahead. Cover and refrigerate.)
  • Cook beans in large pot of boiling salted water until just tender, stirring occasionally, about 8 minutes. Drain beans. Pour vinegar mixture into same pot and bring to simmer. Add beans and toss to coat. Season to taste with salt and pepper. Mound beans in bowl. Sprinkle with parsley and serve.

Tips:

  • Choose fresh, tender long beans: Look for long beans that are bright green and free of blemishes. The beans should snap when you break them in half.
  • Trim the long beans: Remove the tough ends of the long beans before cooking.
  • Blanch the long beans: Blanching the long beans helps to preserve their color and crispness. To blanch the beans, bring a large pot of salted water to a boil. Add the beans and cook for 2-3 minutes, or until they are tender-crisp. Remove the beans from the boiling water and immediately plunge them into a bowl of ice water to stop the cooking process.
  • Make the sweet and sour sauce: The sweet and sour sauce is a key component of this dish. To make the sauce, combine sugar, vinegar, soy sauce, tomato sauce, and pineapple chunks in a saucepan. Bring the mixture to a simmer and cook for 5-7 minutes, or until the sauce has thickened.
  • Stir-fry the long beans: Heat a wok or large skillet over medium-high heat. Add the oil and swirl to coat the pan. Add the garlic and ginger and cook for 30 seconds, or until fragrant. Add the long beans and stir-fry for 3-4 minutes, or until they are tender-crisp. Stir in the sweet and sour sauce and cook for an additional 1-2 minutes, or until the sauce has coated the beans.
  • Garnish and serve: Garnish the sweet and sour long beans with sesame seeds and green onions. Serve immediately with rice or noodles.

Conclusion:

Sweet and sour long beans is a delicious and easy-to-make dish that is perfect for a quick and healthy meal. The combination of sweet, sour, and savory flavors is sure to please everyone at the table. With a few simple ingredients and a little bit of time, you can create a restaurant-quality dish that will impress your friends and family.
