4 bacon strips, cut up
1/4 cup white vinegar
2 tablespoons water
2 green onions with tops, sliced
2 teaspoons sugar
1/4 teaspoon salt
1/4 teaspoon pepper
8 to 10 cups torn leaf lettuce
1 hard-boiled large egg, chopped

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. , To the hot drippings, add the vinegar, water, onions, sugar, salt and pepper, stirring until sugar is dissolved. , Place lettuce in a salad bowl; immediately pour dressing over and toss lightly. 1 1/2 cup(s) pineapple chunks - canned sweetened (reserve juice)
1 1/2 cup(s) peaches - canned in lite syrup - chopped
1/3 cup(s) kalamata olives - pitted and chopped
1/3 cup(s) toasted walnuts - chopped
- lite dressing ingredients
1/2 cup(s) apple cider vinegar
1/2 cup(s) olive oil, extra virgin
3 ounce(s) corn oil
1 tablespoon(s) sugar
1/4 teaspoon(s) black pepper
1/4 teaspoon(s) dried oregano
1 teaspoon(s) kosher salt

Steps:

  • Toss together lettuce, green onions, pineapple chunks, chopped peaches, kalamata olives and toasted walnuts.
