SWEET AND SOUR DILLED CUCUMBER SALAD

Sweet and Sour Dilled Cucumber Salad image

This salad couldn't be easier. Simply slice the peeled cucumber as finely as you can and macerate it in sugar, vinegar, salt and chopped dill. This makes quite a lot of liquid as it sits in the refrigerator, but it's meant to.

SWEET AND SOUR CUCUMBER DILL SALAD

I cut this from a U.S. magazine, but not sure which one as I've had it for quite some time. This summertime dish can be prepared and chilled two hours before serving. The recipe calls for English cucumbers but you can use regular ones if you can't find the English ones. You want a total of about 1 1/2 lbs. of cukes. Cooking time is chilling time.

Time 40m

Yield 4 servings

Number Of Ingredients 7

2 cucumbers, peeled and sliced thinly
1/4 cup lemon juice
1/2 cup rice vinegar
1 teaspoon salt
1 teaspoon grated ginger
3 tablespoons sugar
1/2 teaspoon prepared wasabi

Steps:

  • Wrap sliced cucumbers in paper towels to absorb excess liquid and refrigerate.
  • In a bowl combine lemon juice, vinegar, salt and ginger. Add sugar to taste. Add wasabi and stir until sugar and wasabi dissolve in mixture. Transfer cucumber slices to a bowl. Pour dressing over cucumbers and toss to coat.

Tips:

  • Use a mandoline or sharp knife to thinly slice the cucumbers for a more uniform and visually appealing salad.
  • Soaking the cucumbers in ice water for at least 30 minutes before assembling the salad will help to reduce their bitterness and make them more crisp.
  • For a sweeter salad, use more sugar or honey in the dressing. For a more tangy salad, use more vinegar.
  • If you don't have fresh dill, you can substitute dried dill or another fresh herb, such as parsley or basil.
  • Serve the salad immediately after assembling, or it will lose its crispness.

Conclusion:

Sweet and sour cucumber salad is a refreshing and flavorful side dish that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. With its combination of sweet, sour, and salty flavors, this salad is sure to be a hit at your next potluck or barbecue.
