SWEET AND SOUR BEETS
These are pretty much like Harvard beets, you can use canned beets slices (use one can) for this, or fresh cooked beets, I prefer the fresh cooked! also adjust the sugar to taste. You can double this recipe if desired, don't omit the orange zest, it really adds a kick to the beets!

SWEET AND SOUR PINEAPPLE BEETS (FAT FREE)
We love this beet recipe...it has just the right sweet and sour taste, but of coarse, you may adjust all seasonings to taste... I usually make this with a turkey, chicken or ham dinner...this recipe is great as it serves 6-8 people.

SWEET AND SOUR PICKLED BEETS
These are quick and easy to make. You'll want to snack on them right out of the jar. They're much more flavorful than those bland sliced beets you see on salad bars.

Tips:
- Select firm and deep-red beets: Look for beets that are smooth and free of blemishes. Avoid beets with cuts or bruises.
- Trim the greens and root: Cut off the beet greens, leaving about 1 inch of stem. Trim the root end to remove any fibrous roots.
- Scrub the beets: Use a vegetable brush to scrub the beets under cold water. This will remove any dirt or debris.
- Cook the beets until tender: You can cook the beets in boiling water, steaming, or roasting. The cooking time will vary depending on the size of the beets.
- Use a sharp knife to cut the beets: This will help to prevent the beets from bleeding and staining your hands.
- Add the beets to the vinegar mixture while they are still warm: This will help the beets absorb the flavors of the vinegar.
- Let the beets cool completely before serving: This will allow the flavors to meld together.
Conclusion:
Sweet and sour beets are a delicious and versatile side dish that can be enjoyed as a part of a main meal or as a snack. They are also a good source of vitamins and minerals, including vitamin C, potassium, and fiber. With their vibrant color and tangy flavor, sweet and sour beets are a surefire hit at any gathering.
