Our Test Kitchen recreated the classic Chinese beef and broccoli dish using a beautiful variety of colorful veggies and inexpensive ground beef. Serve over rice noodles--which you can find in the Asian section of your grocery store--for a change from regular rice.

1 can (20 ounces) unsweetened pineapple tidbits
2 tablespoons cornstarch
1 cup reduced-sodium beef broth
1/4 cup reduced-sodium soy sauce
2 teaspoons minced fresh gingerroot
1 teaspoon minced garlic
2-1/2 cups uncooked instant rice
2 cups fresh broccoli florets
1/2 pound sliced fresh mushrooms
1 medium sweet red pepper, julienned
1 can (8 ounces) sliced water chestnuts, drained
1 tablespoon sesame oil
1 pound lean ground beef (90% lean)

Steps:

  • Drain pineapple, reserving juice; set pineapple aside. In a small bowl, combine the cornstarch, broth, soy sauce, ginger, garlic and reserved juice until blended; set aside., Cook rice according to package directions. 1 tablespoon cornstarch
1 tablespoon cold water
1 tablespoon vegetable oil
1 medium onion, cut into 1-inch pieces
1 can (8 ounces) pineapple chunks in juice, undrained
1/4 cup sugar
1/4 cup white vinegar
1 tablespoon chicken bouillon granules
1 tablespoon soy sauce
1 medium bell pepper, cut into 1-inch pieces
2 medium tomatoes, each cut into 8 wedges
Hot cooked rice, if desired

Steps:

  • Remove fat from beef. Cut beef with grain into 2-inch strips; cut strips across grain into 1/8-inch slices. Mix cornstarch and cold water.
  • Heat wok or 12-inch skillet over medium-high heat. Add oil; rotate wok to coat side. Add beef and onion; stir-fry about 3 minutes or until beef is brown. Stir in pineapple, sugar, vinegar, bouillon granules and soy sauce. Heat to boiling. Stir in cornstarch mixture; cook and stir 1 minute.

1 pound beef top sirloin steak, cut into 1/2-inch cubes
1 teaspoon salt
1/2 teaspoon pepper
3 teaspoons canola oil, divided
1 large green pepper, cut into 1/2-inch pieces
1 large sweet red pepper, cut into 1/2-inch pieces
2 medium tart apples, chopped
1/2 cup plus 2 tablespoons thinly sliced green onions, divided
2/3 cup packed brown sugar
1/2 cup cider vinegar
Hot cooked rice, optional

  • In a small bowl, mix cornstarch and water until smooth. Sprinkle beef with salt and pepper.
