Pastry
1 cup all-purpose flour
1/2 cup Land O Lakes® Butter softened
2 tablespoons water
Topping
1 cup water
1/2 cup Land O Lakes® Butter
1 cup all-purpose flour
1 teaspoon almond extract
3 large Land O Lakes® Eggs
Glaze
1 cup powdered sugar
1 tablespoon Land O Lakes® Butter softened
1/2 teaspoon almond extract
1 to 2 tablespoons milk
Garnish
1/4 cup sliced almonds

Steps:

  • Heat oven to 350°F.
  • Place 1 cup flour in bowl; cut in 1/2 cup butter with pastry blender or fork until mixture resembles coarse crumbs. Stir in 2 tablespoons water with fork until flour mixture is just moistened. Shape dough into ball. Pat dough into 10-inch circle on ungreased baking sheet. Set aside.
  • Combine 1 cup water and 1/2 cup butter in 2-quart saucepan. Cook over medium heat 6-8 minutes or until mixture comes to a full boil and butter is melted. Remove from heat; stir in 1 cup flour and 1 teaspoon almond extract. Reduce heat to low. Cook, stirring constantly, 1 minute or until mixture forms a ball . Remove from heat.
  • Add 1 egg at a time, beating with whisk or wooden spoon after each addition until smooth and glossy.
  • Spread egg mixture over pastry circle. Bake 50-55 minutes or until surface is crisp and golden. Cool completely. (Topping rises during baking and shrinks during cooling, forming custard-like layer.)
  • Combine powdered sugar, 1 tablespoon butter and 1/2 teaspoon almond extract in bowl until well mixed. Add enough milk for desired glazing consistency.
  • Drizzle glaze over puff; sprinkle with almonds.

SWEDISH KRINGLER OR ALMOND PUFF

Swedish Kringler or Almond Puff image

This is my personal favorite "favorite". It is the butteryist, richest, flakiest, custardiest, yummiest, creation with so few ingredients. This recipe goes way, way back to the 1940's and it is always a hit no matter when I bake it or to who I serve it to...

STEP ONE
1/2 c soft butter or margarine
1 c all purpose flour
2 Tbsp water
STEP TWO
1/2 c butter or margarine
1 c water
1 tsp almond extract
1 c flour
3 eggs
CONFECTIONERS SUGAR GLAZE
1 1/2 c powdered sugar
2 Tbsp butter, soft
1 1/2 tsp almond flavoring or vanilla
1-2 Tbsp warm water

Steps:

  • 1. STEP ONE: Heat oven to 350 degrees. Cut butter into flour. Sprinkle water over this mixture. Mix well with fork. Round into ball. Divide in half. On ungreased baking sheet, pat each half into a strip 12 inches by 3 inches. Strips should be about 3 inches apart ( side by side) from each other on the baking sheet.
  • 2. STEP TWO: In medium saucepan heat butter and water to rolling boil. Remove from heat and quickly stir in almond extract and 1 cup flour. Stir vigorously over low heat until mixture forms a ball ( about 1 minute). Remove from heat; beat in eggs, all at one time until smooth.
  • 3. STEP TWO cont: Divide above mixture in half, spread evenly over strips already on the baking sheet, covering completely.
  • 4. Bake about 1 hour or until topping is crisp and brown. Cool. Frost with confectioners sugar glaze and sprinkle generously with nuts. We like toasted sliced almonds, mixed nuts are always great, but your choice. When serving, slices can be cut as thick or thin as you like:))

CARDAMOM KNOTS

Cardamom Knots image

These Swedish morning buns, also known as *Kardemummabullar*, are traditionally paired with coffee and have an amazing floral and delicately peppery flavor.

Provided by Martha Collison

Categories     HarperCollins     HarperCollins     Pastry     Bake     Cardamom     Bread     Breakfast     Brunch     Sweden

Yield Makes 12 buns

Number Of Ingredients 17

Dough:
50g (3 1/2 Tbsp) butter, cubed
250ml (1 cup) whole milk
500g (1 lb) white bread flour, plus extra for dusting
1 (7g) packet fast-acting dried yeast
1 tsp fine salt
50g (1/4 cup) granulated sugar
1 tsp ground cardamom
Oil, for greasing
Cardamom filling:
150g (10 1/2 Tbsp) butter, softened
100g (1/2 cup packed) soft dark brown sugar
2 tsp ground cardamom
Cardamom syrup:
50g (1/4 cup) granulated sugar
1/2 tsp ground cardamom
Pearl sugar, to decorate (optional)

Steps:

  • Start by making the dough. Place the cubed butter in a small saucepan with the milk. Heat over a low heat until the cubes of butter have completely melted, then remove from the heat and set to one side to allow the mixture to cool for a few minutes.
  • Place the flour in a large bowl, or the bowl of a stand mixer fitted with the dough-hook attachment, and add the yeast to one side of the bowl and the salt, sugar and cardamom to the other. If you put the salt directly on the yeast it may kill it, which will stop your dough from rising.
  • Gradually pour the warm butter and milk into the bowl with the flour, mixing all the time, using your hands or the dough-hook attachment, until a sticky dough forms. You may not need to add all the milk mixture, or you might need to add a little more milk - you want to add just enough to make a sticky but not wet dough.
  • Dust your worktop lightly with flour, tip the dough out on to it and knead it for 5-10 minutes (or knead using the dough hook on the stand mixer) until the dough is no longer sticky and has become smooth and elastic. Grease the bowl in which you mixed the dough with oil, place the dough back in the bowl, cover with a tea towel or cling film and leave to rise at room temperature for 1-3 hours or until doubled in size. You can leave the dough to prove in the fridge overnight if you want these for breakfast!
  • While the dough is rising, combine the filling ingredients in a small bowl to make a thick paste. Line 2 baking trays with baking parchment.
  • Tip the risen dough out of the bowl on to a worktop lightly dusted with flour and fold it in on itself a couple of times to knock out any large air pockets.
  • Roll out the dough thinly to make a very large rectangle measuring roughly 50 x 30cm. Spread the cardamom filling mixture all over the dough, making sure it goes right to the edges.
  • Fold one of the short ends over two-thirds of the dough, then fold the remaining third over - as if you are folding a letter or making puff pastry. You should have one neat rectangle consisting of three layers of dough, and all the filling should be enclosed inside.
  • Use a sharp knife to cut the dough into 12 even strips. Taking one of the strips, stretch out and twist it a few times. Tie it into a loose knot, tucking the edges in. Place the knot on a lined baking tray and repeat with the remaining strips, arranging them on the tray and leaving a few centimeters between each. Leave for 45 minutes at room temperature to rise again.
  • While the knots are proving, preheat the oven to 400°F/200°C/180°C fan/gas 6. Make the cardamom syrup by bringing the sugar, ground cardamom and 50ml of water to the boil in a small saucepan and letting it bubble for a few minutes, stirring occasionally, until the sugar has dissolved. Remove from the heat.
  • Bake the buns for 15-20 minutes or until golden brown, then brush with the cardamom syrup as soon as they come out of the oven. Sprinkle with pearl sugar, if you wish, and serve warm.

SWEDISH PUFF PASTRY

Swedish Puff Pastry image

This is just something I grew up with. It is flaky, buttery, and delicious! My mother got this recipe from a neighbor lady when I was a very little girl. Even though she was Norwegian, she called it Swedish Puff! That made my mother smile (we are Swedish!) There was always some friendly joking between the Swedes and...

CRUST
1 c all purpose flour
1/2 c butter, softened
1 Tbsp water
PUFF
1 c water
1/2 c butter
1/2 c flour
3 large eggs
1 tsp almond extract
ICING
1 1/2 c powdered sugar
1/4 tsp almond extract
water, a few drops at a time
1/2 c sliced almonds

Steps:

  • 1. Mix crust ingredients as you would pie crust. (This is what the original recipe said but it is kind of like pie crust as the butter is soft.) Press into a pizza pan. Set aside.
  • 2. To make puff place 1 c. water and 1/2 c. butter into a saucepan. Bring to a boil. Remove from heat. Stir in remaining flour until a thick paste forms. Beat in eggs one at a time until well blended. Add 1 t. almond flavoring.
  • 3. Spread puff mixture over crust in the pizza pan. Bake at 350 degrees about 40-45 minutes until puffed and golden.
  • 4. Remove from oven and cool. Mix icing by adding remaining almond flavoring to powdered sugar. Add water, a few drops at a time, until icing is smooth and can be drizzled over pastry.
  • 5. Drizzle icing over pastry and sprinkle almonds over icing. Cut into squares (I know. Weird. It IS a round pan.) and serve with Swedish coffee. Or any coffee. We just always had Swedish.
  • 6. If you like, sprinkle a few well-drained, chopped maraschino cherries on with the almonds.

Tips:

  • Use cold butter and puff pastry dough. This will help prevent the dough from becoming too greasy and will result in a flakier pastry.
  • Roll out the dough evenly. This will help ensure that the pastry cooks evenly.
  • Chill the dough before baking. This will help prevent the dough from shrinking.
  • Bake the pastry in a preheated oven. This will help ensure that the pastry cooks evenly.
  • Do not open the oven door during baking. This will cause the pastry to fall.
  • Let the pastry cool slightly before filling. This will help prevent the filling from making the pastry soggy.

Conclusion:

Swedish puff pastry is a delicious and versatile pastry that can be used to make a variety of sweet and savory dishes. With a little care and attention, you can create beautiful and delicious pastries that will impress your friends and family.
