SWEDISH BUTTER COOKIES

Swedish Butter Cookies image

I got this recipe from my mother who said she's had it so long she no longer remembers where it came from. She always made these at Christmas while I was growing up. I made them last Christmas and used pomegranit jelly. I don't actually know how much jelly is in the recipe, but this site apparently doesn't like that, so I made something up. Use whatever amount you like. They're my favorite cookies!

Time 40m

Yield 36 cookies

Number Of Ingredients 9

1/2 lb butter
1/2 cup sugar
1 egg, separated
1 tablespoon cream
1 teaspoon vanilla
2 cups flour, sifted
1/2 teaspoon baking powder
1 cup pecans, chopped fine
3/4 cup jelly, of your choice for filling

Steps:

  • Cream butter and sugar together.
  • Add egg yolk, cream and vanilla; mix well.
  • Add flour sifted with soda, then half of chopped nuts.
  • Form dough into small balls, dip in egg white, then dip in chopped pecans.
  • Make small indent in center of each cookie and fill with jelly.
  • Bake at 350 degrees for 20 minutes.
  • Remove carefully, as they are fragile.

Tips:

  • Use high-quality butter: The type of butter you use will greatly affect the flavor of your cookies. Look for a butter that is unsalted and has a high fat content (82% or higher).
  • Cream the butter and sugar together until light and fluffy: This will help to create a smooth and evenly textured cookie.
  • Chill the dough before baking: This will help to prevent the cookies from spreading too much in the oven.
  • Bake the cookies until the edges are just beginning to brown: Overbaking will make the cookies dry and crumbly.
  • Let the cookies cool completely before storing them: This will help to prevent them from becoming too soft or sticky.

Conclusion:

These Swedish pecan butter cookies are a delicious and easy-to-make treat that are perfect for any occasion. With their rich buttery flavor and crunchy pecan topping, these cookies are sure to be a hit with everyone who tries them. So next time you're looking for a sweet and satisfying snack, be sure to give these cookies a try!
