SWEDISH CORNBREAD
I found this recipe in the November 1995 issue of Bon Appetit. It is a moist, sweet cornbread that makes a nice accompaniment to breakfast, lunch, or dinner. It is also delicious right out of the oven slathered in butter. You can prepare it a day ahead, just cool the bread completely, cover with foil and store at room temperature. This also makes yummy muffins.

- Sift flour, baking powder and salt into small bowl.
- Add to cornmeal mixture and stir until just blended. So not over mix, batter will be lumpy.

- Serve warm or at room temperature.
Tips:
- Choose the right cornmeal: Use a medium-grind cornmeal for a classic Southern-style cornbread. For a finer texture, use a finely-ground cornmeal. If you want a heartier bread, use a coarse-ground cornmeal.
- Use fresh ingredients: Fresh corn kernels, buttermilk, and eggs will give your cornbread the best flavor and texture. If you don't have fresh corn kernels, you can use frozen or canned corn, but be sure to drain it well.
- Don't overmix the batter: Overmixing the batter will make the cornbread tough. Mix the ingredients just until they are combined.
- Bake the cornbread in a hot oven: A hot oven will help the cornbread rise and give it a crispy crust. Preheat the oven to 400°F (200°C) before baking.
- Let the cornbread cool before serving: Cornbread is best served warm, but it's important to let it cool for a few minutes before serving. This will help the bread set and make it easier to slice.
Conclusion:
Swedish cornbread is a delicious and versatile bread that can be enjoyed for breakfast, lunch, or dinner. It's a great side dish for soups and stews, or it can be served with butter and honey for a sweet treat. With its simple ingredients and easy-to-follow instructions, this recipe is sure to become a favorite in your kitchen.
