This recipe comes from an old Swedish recipe book given to the employees of IKEA many years ago. These easy to make cookies simply melt in your mouth. They are one of those "nobody can eat just one" cookies!

Number Of Ingredients 6

3 1/2 c flour
2 c sugar
2 c butter
1 Tbsp baking powder
1 tsp vanilla
1 c sweetened coconut

Steps:

  • 1. Cream together sugar and butter. Add vanilla. Add dry ingredients and beat on low for 3 minutes. Add coconut just until blended.
  • 2. Divide mixture in half and roll into logs approximately 12" X 2". Wrap in wax paper and refrigerate over night.
  • 3. Preheat oven to 350 degrees. Slice logs into 1/4" slices. Place approximately 2 " apart on the cookie sheet as they will spread. Bake just until the edges are a light tan color. Can be anywhere from 8 - 12 minutes depending on your oven. Enjoy! Sprinkle with colored sugar for a more festive look.

2 cups all-purpose flour
1/2 teaspoon salt
2 sticks (1 cup) unsalted butter, softened
1 1/4 cups sugar
1 teaspoon crushed ammonium carbonate (also called baker's ammonium)
1/2 teaspoon almond extract
1 1/2 cups sweetened flaked coconut

Steps:

  • Sift together flour and salt.
  • Beat together butter and sugar with an electric mixer until pale and fluffy. Beat in ammonium carbonate and almond extract until combined well. Mix in flour mixture at low speed just until blended, then stir in coconut. Form dough into a disk and chill, wrapped in plastic wrap, until firm, about 1 hour.
  • Preheat oven to 300°F.
  • Roll dough into 1-inch balls and arrange 1 inch apart on greased baking sheets.
  • Bake cookies in batches in upper third of oven until pale golden around edges, 18 to 22 minutes. Transfer cookies to a rack to cool.
