Time 21h12m

Yield 1 potful, 6 serving(s)

Number Of Ingredients 8

2 cups dried brown beans (available in specialty stores)
6 cups water
1 1/2 teaspoons salt
1/2 cup white vinegar
1/2 cup dark corn syrup
3 tablespoons brown sugar, packed
2 tablespoons butter, melted
1 small cinnamon stick

Steps:

  • Pick over and rinse the beans. Add the water and soak the beans at least 12 hours.
  • Bring the beans and soaking water to a boil. Cover the pan and simmer for 1 1/2 hours.
  • Add the salt, vinegar, syrup, brown sugar, butter, and cinnamon stick. Stir to mix.
  • Simmer, uncovered, for 1 hour, or until the beans are tender. The liquid should be as thick as a sauce at the end of the cooking period.
  • If the liquid is not thickened, turn up the heat for 10 minutes, or until the liquid is reduced. Remove the cinnamon stick. Serve hot.

Tips:

  • Choose the right beans. The best beans for this recipe are Swedish brown beans, also known as bruna bönor. They are a type of kidney bean that is popular in Swedish cuisine. If you can't find Swedish brown beans, you can substitute another type of kidney bean, such as red kidney beans or dark red kidney beans.
  • Soak the beans overnight. This will help to soften the beans and reduce the cooking time. If you don't have time to soak the beans overnight, you can quick-soak them by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Use a heavy pot. A heavy pot will help to distribute the heat evenly and prevent the beans from burning.
  • Don't add salt to the beans until they are almost done cooking. Adding salt too early can toughen the beans.
  • Serve the beans with your favorite sides. Some popular sides for Swedish brown beans include boiled potatoes, mashed potatoes, or rye bread.

Conclusion:

Swedish brown beans are a delicious and hearty dish that is perfect for a cold winter day. They are easy to make and can be served with a variety of sides. With just a few simple tips, you can make perfect Swedish brown beans every time.
