This is based on my mother's recipe, although she did not use bread crumbs, but cracker crumbs. We don't buy crackers, but always have a couple of slices of bread available to turn into crumbs. I've even used pumpernickel crumbs - very good in this meatloaf!

2 lb ground meat - use one kind, or a combination of beef, pork, turkey, veal, whatever you have on hand.
1 envelope lipton onion soup mix
8 oz tomato sauce
2 eggs, beaten
1 1/2 c bread crumbs, any type
1/2 tsp black pepper (or less to taste)
2 Tbsp worcestershire sauce

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Break the ground meat up into loose chunks. Mix in all the other ingredients well, but don't mix too hard, as it will make it too dense.
  • 3. Form into a loaf shape in a pan that is about 1-2 inches bigger all the way around. Lining the pan with crinkled aluminum foil helps with the baking, and the cleanup. (Or, fill muffin cups with mixture.)
  • 4. Bake: for whole loaf, 60-70 minutes. Use meat thermometer and cook to at least 165 degrees. For muffin tin, it only takes about 20 minutes.
  • 5. Let cool slightly before slicing or removing from muffin pan.
  • 6. If you want to top it with something, mix together 1-2 tablespoons worcestershire sauce and 1/2 cup ketchup and brush on during last 15 minutes of cooking.

3 celery ribs, minced
1/2 large yellow onion, minced
2 carrots, grated
3 garlic cloves, minced
1 1/2 tablespoons dried basil
1 1/2 tablespoons dried oregano
2 tablespoons fresh rosemary, chopped
1 1/2 teaspoons pepper
1 1/2 teaspoons salt
1 2/3 cups breadcrumbs
2 large eggs
1/4 cup heavy cream
2 tablespoons sun-dried tomatoes packed in oil, minced
1/2 cup ketchup
1/2 cup parmesan cheese, grated
1/4 cup mozzarella cheese, grated
2 lbs lean ground turkey

Steps:

  • Preheat oven to 350°F.
  • Spray TWO 8 1/2 x 4 1/2 inch loaf pans with Pam.

I snagged the basic recipe for this from AllRecipes.com but have changed it a great deal to suit my family's tastes. My husband is not a fan of meatloaf but BEGS for this one, as do my 2 and 4 year old. It's super easy and can be made early in the day and then just spread the sauce on top and bake. It's sweet, tangy and a bit spicy! I bet everyone will ask for seconds!

1 egg
4 garlic cloves, minced (I add more!)

salt, to taste
pepper, to taste
1/3 cup ketchup
1/4 cup brown sugar, packed

3 medium onions, sliced thin
6 cloves garlic, peeled and chopped
3 large ripe tomatoes, cored and chopped
1 cup bread crumbs
1 1/2 pounds lean ground beef
1 large egg
1 teaspoon dried oregano
2 tablespoons finely minced Italian parsley
Pinch crushed red pepper flakes
Salt and freshly ground black pepper to taste
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat oven to 350 degrees.
  • Place the onions in a heavy skillet, preferably nonstick. Cover and cook on low heat about 10 minutes, until the onions are soft and just beginning to brown. Stir in the garlic and cook a minute or so longer. Remove one-third of this mixture from the pan and set aside.
  • Add one-third of the tomatoes to the pan and cook about five minutes, until the excess liquid has evaporated. Transfer mixture to food processor and process to chop very fine.
  • Place the finely chopped onion mixture in a bowl and mix well with the bread crumbs, the beef, the egg, oregano, half the parsley, the red pepper and salt and pepper. Form the mixture into a loaf and place in a shallow baking dish. Bake 90 minutes.
  • While the meatloaf is baking, return the reserved onion mixture to the skillet. Add the remaining tomatoes and the olive oil. Simmer over medium heat about 10 minutes. Add the reserved parsley and season to taste with crushed red pepper, salt and freshly ground black pepper. Set this sauce aside until you are ready to serve the meatloaf, then reheat the sauce and serve it alongside.
