Meringue cookies with a surprise inside. A variation of this recipe would be to omit the peppermint extract and add 1 1/2 cups chopped pecans after the stiff peaks form.

3 egg whites
1 teaspoon vanilla extract
¼ teaspoon cream of tartar
¼ teaspoon peppermint extract
1 pinch salt
1 cup white sugar
44 milk chocolate candy kisses, unwrapped

Steps:

  • In small bowl, beat egg whites, vanilla, cream of tartar, peppermint extract (if using) and salt till soft peaks form.
  • Very gradually add sugar; bet till very stiff peaks form. Drop by tablespoon 1 1/2 inches apart on lightly greased cookie sheet.
  • Press a chocolate kiss into each cookie. With a table knife, bring meringue up over candy.
  • Bake in 275 degree F (140 degrees C) oven for 30 minutes. Immediately move to rack to cool.

I received this recipe back when I was in the 7th grade in my homemaking class and I have somehow managed to keep it this long. I guess the recipe is just that good. I make these cookies for Thanksgiving and Christmas and if I even think about skipping one year I get in trouble from my husband and friends!

Number Of Ingredients 7

1 cup softened butter (No Substitutes)
1/2 cup granulated sugar
1 teaspoon vanilla
2 1/2 cups flour
3/4 cup chopped pecan pieces
1 bag Hershey chocolate kiss (Foil Taken Off)
1 box powdered sugar

Steps:

  • Preheat oven to 375 degrees.
  • Cream together butter, sugar and vanilla in a large bowl until fluffy.
  • Gradually add in the flour and chopped pecans.
  • Take about 1 Tbs.
  • of the dough and roll into a ball.
  • Press the dough down in the palm of your hand.
  • Take a Hershey's Kiss and place it in the middle of your dough.
  • Bring the sides of the dough up and around the Hershey's Kiss.
  • Once the candy is completely surrounded by the dough, roll it again in the palm of your hands until a ball forms.
  • Repeat this step until you use all of your candy or until all of your dough is gone.
  • Place cookies on an un-greased cookie sheet and bake for only 10-11 minutes.
  • Once cookies are completely cooled, roll them in the powdered sugar and ENJOY!

This was one of Grandma's favorite cookies to make and we loved them too. She alway put a lot of chocolate chips in them.And if we wanted any cookies we had to crack the pecans. From our other grandma who lived in Alabama and had 2 pecan trees. she would send us a box of nuts every year they were so good.

Number Of Ingredients 8

4 large egg whites
1/4 tsp salt
1/4 tsp cream of tartar
1 1/2 c granulated sugar
2 tsp vanilla extract
3/4 c flaked coconut
1 c chopped pecans
1 c chocolate chips

Steps:

  • 1. Beat egg whites till foamy. Add salt, cream of tartar. Continue beating till egg whites hold a peak. Add sugar 2 Tablespoons at a time. Fold in coconut, nuts and chips(sometimes I use mini chips). Cut a brown paper bag to fit cookie sheet. (I use parchment paper). Drop by teaspoonful on paper onto prepared sheet. Bake at 300^ for 25 minutes. Put paper with cookies on a wet towel to steam off.(omit if you use parchment paper or not- depends if they are sticking or not). Remove with spatula immediately.
