Categories     main-dish

Time 45m

Yield 6 servings

Number Of Ingredients 19

1 pound fettuccine
1 pound rib eye steak, cut into bite-size pieces
1/2 pound large shrimp, peeled and deveined
3 teaspoons Cajun seasoning
Kosher salt and freshly ground black pepper
2 tablespoons salted butter
2 tablespoons olive oil
1 green bell pepper, sliced
1 red bell pepper, sliced
1 small red onion, sliced
1 cup halved cherry tomatoes
3 cloves garlic, minced
2 cups chicken stock
1/2 cup white wine
1 cup heavy cream
3 to 4 dashes Worcestershire sauce
Cayenne or hot sauce, to taste
2 scallions, sliced
2 tablespoons chopped fresh parsley

Steps:

  • Cook the fettucine according to the package instructions, then drain and set aside.
  • Sprinkle the steak and shrimp with 1 teaspoon each of the Cajun seasoning, along with a pinch of salt and pepper. Toss to coat.
  • Heat the butter and olive oil in a large cast-iron skillet over medium-high heat. When the butter has melted and the oil is hot, add the steak and shrimp and cook until the steak has browned on all sides and the shrimp are opaque and almost cooked through, about 3 minutes. Remove the steak and shrimp to a plate with a slotted spoon.
  • Add the bell peppers and onion to the same skillet, then sprinkle over the remaining teaspoon Cajun seasoning. Cook until the veggies begin to blacken, 1 to 2 minutes. Add the tomatoes and garlic, then stir gently for an additional 30 seconds. Add the chicken stock and wine, stirring to release all the flavors from the bottom of the skillet. Allow to cook for a couple minutes, then reduce the heat slightly. Add the cream, Worcestershire sauce and hot sauce, then continue to cook until the sauce has started to thicken. Taste and adjust the seasonings as needed.
  • Add the steak and shrimp back to the skillet along with any juices left on the plate, then stir. Add the fettuccine and toss to combine.
  • Garnish the skillet with the scallions and parsley, then serve and enjoy.

SURF AND TURF KEBABS

Surf and Turf Kebabs image

Kebabs are a family favorite--offering a little bit of everything for everyone--and these are no exception. Plump shrimp, cubes of sirloin and wheels of corn are grilled together before being brushed with a sweet and sour peach sauce. And since they're grilled indoors, you can enjoy them any time of the year.

Provided by Food Network Kitchen

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 16

1 tablespoon unsalted butter
1 shallot, finely diced
1/4 cup granulated sugar
4 small ripe peaches (about 1 pound), pitted and coarsely chopped
1/4 cup peach preserves
2 tablespoons Worcestershire sauce
2 tablespoons white wine vinegar
Pinch of crushed red pepper flakes
2 sprigs fresh thyme
Kosher salt and freshly ground black pepper
2 ears corn, shucked and each cut into 8 wheels
1 1/4 pounds beef sirloin, cut into 16 chunks (about 1 1/2-inch pieces)
16 large peeled and deveined shrimp (about 1 pound)
Olive oil, for brushing
White rice, for serving
Green salad, for serving

Steps:

  • Heat the butter in a medium saucepan over medium-high heat until melted and foamy. Add the shallots and cook, stirring frequently, until softened, about 2 minutes. Add the sugar and peaches and cook, stirring, until the sugar is melted and the peaches are starting to soften, about 3 minutes.
  • Stir in the peach preserves, Worcestershire sauce, vinegar, red pepper flakes, thyme, 1/2 teaspoon salt, 1/2 teaspoon black pepper and 1/2 cup water. Bring to a boil, then reduce to a simmer and cook until the peaches are completely softened and the mixture is thickened to the consistency of loose jam, 10 to 15 minutes depending on the juiciness of the peaches. Discard the thyme sprigs. If the peaches have not completely broken down, mash them with a potato masher to help them along. Keep warm over low heat.
  • Meanwhile, heat a large grill pan over high heat.
  • Thread one piece of corn onto a 15-inch metal skewer, followed by a piece of sirloin and then a piece of shrimp; repeat in that order until you have 4 of each item on the skewer. Repeat with the remaining corn, sirloin and shrimp on 3 additional 15-inch metal skewers. Brush the kebabs with olive oil and sprinkle generously with salt and black pepper.
  • Cook the kebabs, turning a few times, until charred all over and the steak and shrimp are cooked through, 25 to 30 minutes. Transfer the kebabs to a platter and brush generously with the peach sauce. Serve with rice, salad and extra peach sauce on the side.

SURF AND TURF SKEWERS WITH BOURBON TERIYAKI SAUCE

Surf and Turf Skewers with Bourbon Teriyaki Sauce image

Provided by Katie Lee Biegel

Categories     main-dish

Time 25m

Yield 8 skewers

Number Of Ingredients 18

1/2 cup soy sauce
1/4 cup bourbon
1/4 cup mirin
1/4 cup packed brown sugar
2 tablespoons honey
1 tablespoon minced fresh ginger
1 tablespoon toasted sesame oil
2 teaspoons Dijon mustard
2 teaspoons sriracha
2 cloves garlic, minced
Juice of 1 lime
32 extra-large shrimp (about 1 1/2 pounds), peeled and deveined, tail on
2 strip steaks (about 1 1/2 pounds), cut into 1-inch cubes to make 32 pieces
Kosher salt and freshly ground black pepper
Canola oil, for brushing the grill grates
1 navel orange, cut into wedges
3 scallions, sliced
1 tablespoon toasted sesame seeds

Steps:

  • Preheat a gas grill to high heat.
  • For the bourbon teriyaki sauce: Add the soy sauce, bourbon, mirin, sugar, honey, ginger, sesame oil, mustard, sriracha, garlic and lime juice to a medium bowl and whisk to combine. Reserve 1/4 cup of the sauce to drizzle on the finished skewers.
  • For the skewers: Skewer alternating pieces of shrimp and steak on each skewer until you have 4 pieces of each per skewer. Put the skewers on a baking sheet or in a 9-by-13-inch baking dish. Lightly season with salt and season generously with pepper. Brush the skewers with some of the remaining bourbon teriyaki sauce.
  • Brush the grill grates with canola oil. Grill the orange wedges until grill-marked and slightly charred, 2 to 3 minutes per side; set aside. Grill the shrimp and steak skewers for about 2 minutes. Flip and brush with more of the remaining bourbon teriyaki sauce and grill another 2 minutes. Turn the heat to medium low and grill the skewers an additional 1 to 2 minutes per side, basting with more sauce.
  • Transfer the skewers to a platter and garnish with the oranges, scallions and sesame seeds. Drizzle with the reserved bourbon teriyaki sauce.

SURF AND TURF: SCALLOPS AND FILET MIGNON IN MUSHROOM CREAM SAUCE

Surf and Turf: Scallops and Filet Mignon in Mushroom Cream Sauce image

Here's a perfect date-night surf-and-turf menu you can cook together. We like scallops for the "surf" element instead of the usual lobster; they're a cinch to cook up if you use a hot pan with very little fat. We add well-seasoned steaks given a fast sear for juiciness and topped with a versatile, savory mushroom sauce. Asparagus makes the perfect quick-and-elegant side.

Provided by Jet Tila

Categories     main-dish

Time 40m

Yield 2 servings

Number Of Ingredients 26

Two 8-ounce filet mignons, about 1 inch thick
2 teaspoons sugar
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon olive oil or canola oil
2 cloves garlic, unpeeled and smashed
4 sprigs fresh thyme
4 sprigs fresh rosemary
2 tablespoons unsalted butter
2 tablespoons unsalted butter
2 1/2 cups cremini mushrooms, sliced
Kosher salt and freshly ground black pepper
1 clove garlic, unpeeled
1/4 cup dry white wine
1/4 cup chicken broth
3/4 cup heavy cream
1 teaspoon fresh thyme leaves
2 teaspoons olive oil
1 pound asparagus, ends trimmed
1 clove garlic, unpeeled
1 lemon
Kosher salt and freshly ground black pepper
1/4 cup rice flour or all-purpose flour
8 to 10 dry sea scallops (see Cook's Note)
Kosher salt and freshly ground black pepper
2 teaspoons canola oil

Steps:

  • For the perfect filet mignon: Preheat the oven to 375 degrees F. Heat a 10- to 12-inch cast-iron skillet over high heat for 2 to 3 minutes.
  • Pat the steaks dry with paper towels. Combine the sugar, salt and pepper in a small bowl. Sprinkle the mixture over all sides of the steaks and drizzle with oil.
  • Place the steaks in the hot skillet and sear until GBD (golden, brown and delicious), 1 to 2 minutes. Flip the steaks with tongs. Add the garlic cloves, thyme and rosemary to the skillet. Place the pan in the oven and roast until the steaks reach the desired doneness, 6 to 10 minutes for medium-rare; an instant-read thermometer inserted in the center of a steak should register 125 degrees F for medium-rare, 135 degrees F for medium and 145 degrees F for medium-well.
  • Remove the skillet from the oven and add the butter. As the butter melts, baste it over the steaks and herbs. Cover the steaks loosely with foil and rest for 5 to 10 minutes.
  • For the mushroom cream sauce: Heat a large skillet over high heat until hot, 1 to 2 minutes. Swirl in the butter until melted. Add the mushrooms and season with a healthy pinch of salt and pepper. Grate the garlic over the mushrooms with a rasp grater. Stir occasionally until the mushrooms release liquid, about 3 minutes. Stir in the wine and scrape the bottom of the skillet. Cook until the pan is almost bone dry, 2 to 3 minutes longer.
  • Stir in the broth, cream and thyme. Lower the heat until the sauce simmers. Season with salt and pepper and simmer until the sauce is thick enough to coat the back of a wooden spoon, 5 to 10 minutes. Set aside.
  • For the asparagus with lemon and garlic: Heat a large skillet over high heat until very hot, 1 to 2 minutes. Swirl in the oil. Add the asparagus and cook for 30 seconds. Grate the garlic and lemon zest over the asparagus with a rasp grater. Cook, stirring occasionally, until the edges of the asparagus start to brown but the spears are still crisp, about 3 minutes longer.
  • Sprinkle the asparagus with a fat pinch of salt and pepper. Cut the lemon in half and squeeze the juice of half over the asparagus. Stir and season with more salt and pepper if desired.
  • For the seared sea scallops: Heat a large cast-iron skillet over high heat until very hot, 2 to 3 minutes. Place the flour on a plate. Use paper towels to dry the scallops well. Season them with salt and pepper, then lightly coat them on all sides with flour.
  • Add the oil to the skillet and swirl to coat the entire pan. Carefully place the scallops in the hot skillet. Let them sear without disturbing them until browned on the bottom, 1 to 2 minutes. Flip and cook until warm in the middle, about 1 minute longer. Transfer the scallops to a paper towel-lined plate until ready to serve.
  • To serve, place a steak whole or sliced on each plate. Arrange the scallops and some of the asparagus on each plate. Smother the steak with the mushroom sauce and serve.

SURF AND TURF, ASIAN STYLE

Surf and Turf, Asian Style image

I made this the other night for dinner and it was a huge hit with my husband so I thought I'd post it. I found this in 'Steak Lover's Cookbook' by William Rice.

Provided by Hey Jude

Categories     Steak

Time 55m

Yield 4 serving(s)

Number Of Ingredients 17

4 filet mignon, about 4 oz. each (see note at bottom)
2 1/2 tablespoons vegetable oil
1/3 cup minced scallion, plus
1/4 cup minced scallion
1 tablespoon peeled and minced fresh ginger, plus
2 teaspoons peeled and minced fresh ginger
1 tablespoon minced garlic, plus
2 teaspoons minced garlic
1 tablespoon cornstarch
2 tablespoons rice wine or 2 tablespoons water
3/4 cup low sodium chicken broth or 3/4 cup low sodium vegetable broth (make sure it's low-sodium!)
1/4 cup oyster sauce
1 tablespoon soy sauce, plus
2 teaspoons soy sauce
1/2 tablespoon sesame oil
6 ounces medium shrimp, peeled and chopped
1 teaspoon szechuan peppercorns, ground

Steps:

  • Pat the meat dry then coat on both sides with 2 tablespoons of oil and set aside.
  • Combine the 1/4 cup scallions, 1 tablespoon ginger and 1 tablespoon garlic in a small bowl; in another small bowl, combine the cornstarch and rice wine; in a 2-cup measure, combine the broth, oyster sauce, 1 tablespoon soy sauce and the sesame oil; place all the bowls near the stove.
  • Combine the chopped shrimp, Szechuan pepper, 1/3 cup scallions, 2 teaspoon ginger, 2 teaspoons garlic and 2 teaspoons soy sauce in a small bowl, this is your topping; mix it well and set aside.
  • Broil the steaks until seared and nicely browned on one side, about 4 minutes; turn and broil 3 minutes more; spread the shrimp topping evenly over each filet then continue to broil the meat until the topping is opaque and has begun to brown, about 1 minute (the steaks will be medium rare); transfer the steaks to a warm platter or 4 warm plates.
  • While the steaks are cooking, heat a wok or skillet and add the remaining 1/2 tablespoon of vegetable oil and the scallion-ginger-garlic mixture to the wok; stir until the scallions soften, about 30 seconds, then add the liquids in the measuring cup; bring to a boil; stir up the cornstarch mixture and stir it into the wok; when the sauce thickens, about 1 minute, spoon 2 tablespoons of the mixture onto each steak and pass the remainder of the sauce at the table.
  • Note- for my husband and me, I used 2 8-oz filets (because we're pigs) and did not halve the seafood and sauce mixture; the cooking time was roughly doubled and the steaks turned out medium to medium rare.

Surf And Turf: Pork and Shrimp with Garlic (Cerdo y Gambas al Ajillo) image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 2h20m

Yield 8 servings

Number Of Ingredients 21

1 (2-pound) pork loin
Salt and freshly ground black pepper
2 teaspoons garlic powder
2 tablespoons grapeseed oil
2 cups white rice
2 tablespoons butter
1 1/2 teaspoon salt
1 (16-ounce) can red beans
1 (16-ounce) can black beans
1 tablespoon grapeseed oil
1 shallot, minced
1 small jalapeno pepper, stems and seeds removed and minced (use gloves when handling these or any hot peppers)
1 tablespoon rice wine vinegar
1 cup chicken stock
1 cup mango juice, preferably with no additional sugar added
Salt, if needed, and freshly ground black pepper
1/4 cup honey
1 tablespoon grapeseed oil
1 tablespoon butter
4 garlic cloves
1 pound (21 to 30-count) shrimp, shells removed and deveined

Steps:

  • Preheat oven to 375 degrees F.
  • Rub the pork loin with salt, pepper, and garlic powder. In a large skillet with oven safe handles, heat the grapeseed oil over medium-high heat and sear the pork loin on all sides. Cover with foil and roast in the oven until fork tender, about 35 to 45 minutes to 1 hour. At the 30 minute mark, you will remove the foil and brush some of the mango honey sauce on the pork.
  • Bring 5 cups water to a boil in a saucepan with a lid. Add rice, butter and salt. Return to a boil, cover, reduce heat to low and let cook for 20 minutes without removing the lid.
  • After the pork loin has been placed in the oven, begin the mango honey sauce. In a saucepan, heat the grapeseed oil over medium-high heat and saute shallot until translucent, about 2 minutes.
  • Stir in jalapeno and vinegar and cook for about 1 minute. Add chicken stock and mango juice, bring to a boil. Allow to reduce by 2/3, about 10 minutes. Stir in the honey and allow to thicken, about 2 minutes. Reserve about 1/2 cup of the sauce in a small bowl, cover and keep warm by immersing in a larger container of hot water.
  • Uncover the pork and brush some of the mango glaze on the pork and allow to caramelize on the surface of the meat in the oven.
  • Remove the rice from the heat and let sit covered for a minutes. Heat the beans over medium heat and keep warm.
  • Remove pork from oven and let rest.
  • Fold the beans into the rice, cover and let rest.
  • For the shrimp, heat the grapeseed oil over medium heat in a skillet and add the butter to melt. Add the garlic and saute for a couple of minutes, being careful not to burn it. Add the shrimp and cook until just pink and opaque and remove from heat. (Do not overcook the shrimp.)
  • Slice down the pork. Spoon some rice and beans into the center of serving plate. Arrange slices of sliced pork on top and arrange approximately 4 shrimp around. Drizzle with reserved mango sauce.

BACKWOODS SURF-N-TURF ANDOUILLE AND ALLIGATOR CHILI

Backwoods Surf-n-Turf Andouille and Alligator Chili image

I've never had alligator before and never thought of it in chili, so this recipe caught my eye. Wow! The mix of meats is just right. You can taste the creole seasoning added, but it's not overwhelming. The chili's chunky and stick-to-your-ribs good.

Time 55m

Number Of Ingredients 13

1/2 lb diced andouille sausage
1/2 lb alligator meat, diced
1 large bread bowl
3 tsp chili powder
2 tsp cumin
2 can(s) diced petite tomatoes, drained, 14.5 oz each
2 can(s) Hormel Chili, no beans; 15 oz each
1 medium white onion, diced
1 medium green bell pepper, diced small
salt and pepper, to taste
1 clove minced garlic
3 tsp Creole seasoning
4 Tbsp unsalted butter, softened

Steps:

  • 1. Take the sausage and alligator and season with the Creole seasoning thoroughly.
  • 2. Heat a heavy duty pot on high. Add the butter and let melt.
  • 3. Once melted, cook the sausage and the alligator together until cooked all the way through. It will take about 10 min until golden brown or so.
  • 4. Once cooked, drain on a paper towel-lined plate and set aside.
  • 5. Take the onions, peppers, and garlic and sweat them in a pan on med-high heat, about 5 min or so.
  • 6. Add the canned chili, tomatoes, and the seasoning.
  • 7. Mix all together and let simmer for 20 to 30 minutes.
  • 8. After simmering for ten minutes, add the meat and continue to let it simmer.
  • 9. Once it's finished simmering, take and cut the top of the bread bowl off, so it looks like a lid.
  • 10. Take the inside of the bread out and fill with the chili and enjoy.

Crab meat from the sea plus spinach and mushrooms from the land combine with four cheeses to make these delicious mushrooms. Use 10-12 large mushrooms for a meal or 20-24 small ones as appetizers.

STEAK & CREAMY GARLIC SHRIMP (SURF AND TURF) RECIPE

steak & creamy garlic shrimp (surf and turf) Recipe image

Provided by charlotteh371

Number Of Ingredients 13

Steaks:
4 New York Steak strip steaks (Porterhouse steaks)
Salt and pepper to season
1-2 tablespoons olive oil
Creamy Garlic Shrimp:
3 tablespoons unsalted butter, divided
8 ounces (250 g) shrimp deveined, tails on or off
4 cloves garlic (or 1 tablespoons minced garlic)
1/4 cup dry white wine or low-sodium chicken broth
3/4 cup heavy cream* (thickened cream)
1/4 cup fresh shredded parmesan cheese
Salt and pepper to taste
1 tablespoon fresh parsley chopped

Steps:

  • Instructions Pat steaks dry with paper towel. Season with salt and pepper. Heat a large cast iron skillet or grill over medium-high heat. Sear/grill steaks for 4-5 minutes each side until browned and cooked to desired doneness. Transfer steaks to a warm plate; set aside. Melt 2 tablespoons butter in the skillet (if using a skillet). Add shrimp to the skillet, season with salt and pepper and sear until just cooked and pink -- about 2 minutes. Transfer to a bowl; set aside. (For grill: grill seasoned shrimp while brushing with melted butter until done.) To the same skillet, add the remaining butter, add the garlic, sauté until fragrant (about one minute). (If grilling meats, you will need to grab a pan or skillet for this step.) Pour in the white wine (or broth), and allow to reduce to half, while scraping any bits off of the bottom of the pan. Reduce heat to low-medium heat, add the cream and bring to a simmer, while stirring occasionally. Add in the parmesan cheese; allow to melt through the simmering sauce. Season with salt and pepper to your taste. Add the shrimp back into the pan; sprinkle with the parsley, and stir through. Serve with steaks. Recipe Notes For steaks, you can use Strip, Sirloin, Rib eye, T-bone, Eye fillet, Scotch fillet or Porterhouse steaks. *Heavy (thickened) cream can be substituted with half and half, light cream or evaporated milk.

Tips:

  • Choose high-quality ingredients: The quality of your ingredients will greatly impact the final dish. Use fresh, flavorful seafood and tender, juicy steak.
  • Cook the steak and seafood separately: This will ensure that both are cooked to perfection.
  • Don't overcook the seafood: Seafood cooks quickly, so be careful not to overcook it. Otherwise, it will become tough and rubbery.
  • Use a flavorful sauce or marinade: A good sauce or marinade can add a lot of flavor to your surf and turf. Try using a tangy lemon-butter sauce or a savory garlic-herb marinade.
  • Serve with your favorite sides: There are many different sides that you can serve with surf and turf. Some popular options include roasted vegetables, mashed potatoes, and rice.

Conclusion:

Surf and turf is a classic dish that is sure to impress your guests. It is a delicious and elegant meal that is perfect for a special occasion. With a little planning and effort, you can easily make surf and turf at home. So next time you are looking for a special meal to make, give surf and turf a try. You won't be disappointed.
