6 - 7 boneless, skinless chicken breast, cooked and chopped
8 oz each - monterey jack cheese & cheddar cheese
12 corn tortilla's - cut into pieces
1 - 10 1/2 oz can of each - cream of chicken and cream of mushroom soup
3/4 c chicken broth
4 oz can geen chiles - chopped
1 - 15 oz can, chili with or without beans
1 medium onion, chopped
3/4 c salsa
can garnish with chopped tomatoes.,more cheese, onions, sour cream

Steps:

  • 1. Preheat oven 350 degree F. Spray a 9 x 13 baking dish with nonstick cooking spray.
  • 2. Cut your corn tortilla's into squares.
  • 3. In a saucepan, add broth, soups, onions, chili, chiles and salsa...Heat until warmed throughout.
  • 4. In a bowl, add the chicken and tortilla's.
  • 5. Pour warmed soup mixture over the chicken. Stir until well combined. Pour evenly into prepared dish. Sprinkle with cheeses.
  • 6. Cover and bake for 25- 30 minutes. Remove cover and bake another 40 - 45 minutes. Cut into squares and serve with favorite toppings.

This one just came to me. It was wonderful served with mashed potatoes and broccoli. Don't worry, the breading won't burn; let it get really dark and crispy. I know, bacon is the diet no-no, but there are only 3 strips in the whole thing. It adds such a nice old fashioned flavor, from the days when fat was okay to eat.

6 boneless skinless chicken breast halves, trimmed and cleaned
2 eggs
flour
1 tablespoon oil
1/2 cup milk
3 slices bacon
1 small onion
1 teaspoon minced garlic
1/2 cup bouquet garni or 1/2 cup italian seasoning
1 (10 1/2 ounce) can low-fat cream of chicken soup
2 cups low-fat chicken broth

Steps:

  • Preheat oven to 350°F.
  • Render bacon in a large pan.
  • Add onion and cook it down.
  • While onion is cooking, beat eggs and some of the milk together to make an egg wash.
  • Mix 1/2 of the Bouqet Garni with enough flour to bread all the chicken.
  • Remove onions and bacon from pan, leave grease in pan to fry chicken.
  • Flour chicken.
  • Dip in egg wash.
  • Flour again, coat well.
  • Fry chicken in pan, add oil if needed.
  • Brown very well on both sides.
  • Put chicken into 350°F oven to finish cooking.
  • Return onions and bacon to pan.
  • Add soup, stock, the rest of the milk, the rest f the Bouquet Garni and garlic Stir vigorously until a gravy forms.
  • Serve gravy as a side dish to chicken.

2 10 oz pkgs frozen chopped spinach
8 chicken breast halves
1 c mayonnaise
2 cans cream of chicken soup
1tbl lemon juice
1 tsp curry powder
1/2 c grated cheddar cheese
1/2 c buttered bread crumbs

Steps:

  • 1. Recipe is for a 9 x 13 baking dish
  • 2. Spray the baking dish with non-stick spray. Spread spinach on the bottom, and place chicken pieces on the spinach. In a separate dish, mix the soup, mayonnaise, lemon juice and curry powder. Spoon on top and around the chicken. Sprinkle with cheese and top with bread crumbs. Bake at 350 for 70-75 minutes.
  • 3. Modifications and substitutions that can be made are: •fat free sour cream instead of mayonnaise •more curry powder for a stronger flavor •fat free grated cheese •Ritz crackers instead of bread crumbs, and more of them
