1 lb breakfast sausage (i use reg. but hot is good also!)
1/2 green pepper
1/2 onion
1 can(s) tomatoes i use a pint jar of tomatoes i can all my own tomatoes so 16 oz is what i use in this recipe (i have used diced and whole either is good)
2 c sharp cheddar cheese
1 tsp minced garlic or powdered
1 pkg muller's ruffles pasta uncooked (or any thicker pasta that holds well)

Steps:

  • 1. In a large skillet add sausage, peppers and onions. Cook until sausage is just done.
  • 2. Add garlic and tomatoes and cook until it starts to bubble.
  • 3. Add 2/3 box of dry pasta (or more if you like more pasta) fold into sausage mixture. Add 2 cups water and stir into the mix bring to a low boil and reduce heat to simmer. Cover and let simmer until pasta is done adding more water as pasta absorbs it if needed.
  • 4. When pasta is cooked through turn off heat and top with cheese and re cover to melt.
  • 5. I serve this with with a homemade rustic Italian bread and a small side salad! :)
